I love making banana bread, even though I almost never have a ripe banana on hand. Sometimes I buy bananas and not let anyone eat them so they ripen and I can use them for banana bread!

I love the banana bread from Costco, but I’ve always found it too sweet for my taste but I love how moist it is. I’ve made it my mission over the years to make my own version but it’s a little sweet, or very sweet to my liking. It’s safe to say I’ve been making this banana nut bread for decades and I’ve had plenty of time to perfect it.

Every oven is different, so don’t worry if your bread isn’t ready after 45 minutes. Get some clean toothpicks ready, and test your bread by inserting a toothpick into the center of the loaf. If it comes out with a bit of dough, add an additional 5-10 minutes at a time until the toothpick comes out clean.
If you want a dairy-free version, skip the yogurt and add applesauce instead. This is something I always make on a regular basis because hub goes through phases and the last phase he went through he thought he was lactose intolerant so I had to make all kinds of dairy free recipes.
Super Moist Whole Grain Banana Nut Bread
There are two great methods you can use if you’re craving banana bread, but your bananas aren’t right.
1. Place bananas on a baking sheet and bake at 250°F for 10-20 minutes. It will depend on how ripe your bananas are to begin with. Keep an eye on them and add time as you see fit.
An extra day, put your bananas in a paper bag and fold the top over to seal off the outside air. This leaves them in their own ethylene-filled bag, which causes them to ripen. Adding apples, figs, or pears to the bag will help them ripen more.
Now is your chance to customize this heavenly bread! I like to mix some chocolate chips into my banana nut bread. Changing the type of nuts you use, or dried fruit like raisins or cranberries are fantastic additions too!
Moist And Easy Banana Nut Bread
Wrap the banana nuts tightly with plastic wrap or can also be stored in an airtight container. It will keep on your counter for 3 days, or in the refrigerator for about a week. I like to microwave my banana bread slices for 20-30 seconds to soften them, especially if they are already in the fridge.
Frozen banana bread. Freeze whole loaves or individual slices. It will keep in the freezer for 3 to 4 months!
Wrap individual loaves or slices very well in plastic wrap, even if stored in an airtight container. The bread will release moisture that can cause freezer burn without plastic wrap. Let it thaw completely at room temperature.

Store banana bread wrapped in plastic wrap or in an airtight container on the counter for up to 4 days. It actually tastes better the next day when it’s baked.
There are two ways to do this: The quickest way is to place a whole, unpeeled banana on a baking sheet and bake it at 260 °F/130 °C for about 15 minutes, depending on initial ripeness. Another way is to put it in a paper bag and leave it on the counter for a day (unseparated). To speed up the process, add the apples to the paper bag before folding the tops.
