This vegan gluten-free pumpkin chocolate chip cookie recipe makes soft and fluffy gluten-free pumpkin cookies that are moist, cookie-like, and full of warm fall spices. Is there anything better than that?
Oatmeal Pumpkin Cookies
In a medium mixing bowl, combine all dry ingredients: gluten-free oat flour, baking powder, baking powder, cinnamon, pumpkin pie spice, and salt.
Now combine all the wet ingredients in a large mixing bowl: pumpkin puree, coconut sugar, pure maple syrup, coconut oil, flax eggs and vanilla.
Pour the dry mixture over the wet mixture, then mix and fold to make your pumpkin cookie dough. Now, if desired, fold in the vegan chocolate chips!
Cover the pumpkin cookie balls with a stick and top with chocolate chips.
