Hey guess what, I started an autumn garden! Yes, my not green thumb myself, and I am excited because the leaves on my cabbage have started to grow so much! I started them from seeds (which I don’t normally do) and placed them in empty eggshell halves. When it was time to plant them, I just carefully broke up the pots, placed the seedling in the planting bed and sprinkled the dirty pots around it. I wonder if this is what makes them grow so fast. I have never had such quick success with plants!
Anyway, I am so excited because this will be the start of my Grandma Barb Memorial Garden. I showed you guys his amazing garden in my kale video and I think he has let me in on his love of gardening because I’ve been so intrigued by him lately. This fall I only plant cabbage, cabbage and potatoes, but it’s on fire and bursting when spring comes. I can’t wait to show you guys! I have been working like crazy building raised plant beds, laying out my garden and creating the space.

Anyway, after making this vegan banana bread, I knew I had to share it with you! I’ve done it twice since then. It’s so damn easy and delicious and beautiful! It can be added to the list of vegan desserts on this page that “don’t taste vegan!” Like these chewy vegan chocolate chip cookies.
This vegan banana bread really tastes like regular banana bread. It’s so moist and fluffy! Full of fresh banana flavor with hints of cinnamon and vanilla. Not to mention it has such beautiful wet cracks and crevices that I love them. It’s the perfect bread to give or send as a gift because, like all banana breads, it tastes even better the next day!
As a test, after making the first batch of bread (which is perfect and the one I’m sharing with you today) I decided to try another batch. This time I reduced this almond milk and added flax seeds (ground flaxseed + water). While the texture of the finished bread was good, the taste was “nutty and bran-flavored”. There is no need to add egg replacer. Since bananas and oil are good substitutes for eggs, banana bread is the perfect recipe to “go vegan” in my opinion.
I love that this vegan banana bread has such simple ingredients. If you don’t usually have vegan ingredients in your house, you just need to buy some vegan butter and almond milk. Both can be found in most grocery stores.
