Bananas are best frozen when they are ripe and the skin has just started to turn brown. That’s when bananas are sweetest. If you plan to use bananas in a smoothie or bread, freezing them whole is a good idea.

You can freeze bananas in their skins, but you’ll save time and frustration by removing the skins before freezing the bananas.

When it cools, the banana peel will become black and soft. Although bananas are safe to eat when they look like this, the skin is very difficult to remove.
Peeling the handle will also degrade the quality of your banana. They won’t be as “fresh” as they are without the skin, and some people say the shelf life is a month.

Bananas will keep in the freezer for a long time, but are best used within six to eight months. Over time, they will develop freezer burn.
For extra sweetness, place popsicle sticks at the end of whole (or halved) sliced bananas. Then dip them in melted chocolate (roll them in your toppings of choice—nuts, sprinkles, kosher salt, etc.—and place them on a baking sheet. When they’re set, enjoy them as you are). It’s a big difference from store-bought ice cream because it’s made with real fruit and is a good source of potassium. tell them I used to put them in a ziplock bag, but now I just put them in the freezer!

We all know that bananas instantly turn into fruit fly magnets. Tired of wasting them? Become them!
Seriously, that’s it. If you want, you can store them in a ziplock freezer bag so they don’t roll around in the freezer. (I had enough bananas that they burst when I let them go.)
I’ve had bananas in the freezer for a year without a problem (i.e. I thawed them and made them into banana bread that everyone raved about). But if you want to be careful, keep them there for only six months.
How To: Freeze & Use Ripe Bananas
The easiest way is to take the bananas out of the freezer, put them in a bowl or on a deep plate and let them dry in the refrigerator overnight. You can also defrost them on the counter in about four hours. Thawed whole bananas look disgusting, all mushy and brown, but they work great in recipes.
Brown liquid oozes from frozen bananas during defrosting. I tend to throw that water away because it came in contact with the skin and who knows where that banana ended up on its long journey to the freezer. If you pour out the water, you may need to add some water (milk or water will work) to your recipe.
To peel a banana, simply cut one end with scissors and squeeze the soft banana.

My love for cooking with bananas runs deep, and I have the frozen bananas to prove it.
The benefit of this method is that it takes me about 2.5 seconds to pop them in the freezer, and once they’re there, I don’t have to do anything with them until I want to bake.
When I want to make a loaf of blueberry banana bread or baked chocolate chip oatmeal, I just take out as many bananas as I want and let them melt.
When I want to freeze bananas for a smoothie, I like to make them easy because we don’t have to thaw the banana to make the smoothie (phew?).
The Best Banana Bread ~sweet & Savory
I put a piece of parchment paper on a baking sheet, take my spotted banana, peel it and cut it into slices or chunks.
Lay them out so that they are as even as possible (although it’s okay if they overlap a bit).
That way, they won’t clump together, and you can take as many pieces of banana as you need for freezing.
Place them in the freezer to freeze for an hour or two until they harden, then place them in a freezer bag and freeze for up to six months.
Clever Ways To Freeze Banana Bread

Let’s just say you can’t commit to the ultimate treat of all bananas in a baking skin, with a smoothie slice freezer bag you can meet in the middle.
Place them on a rimmed baking sheet lined with parchment paper and freeze until firm, about 2 hours.
The downside to this method is that your blender may have a harder time blending frozen bananas than chunks.
