Easy Banana Bread (no Mixer!) Recipe
Before you start, preheat your oven! Even if your oven beeps and tells you it’s hot after 5 minutes you want to give it at least 20 minutes to preheat (because trust me, 90% of ovens are dormant and nowhere near when they say they are!).

In a large mixing bowl, mash 1.5 cups (about 3 large) bananas with a fork until mashed. Make sure you break any large chunks or pieces of banana into your bread which will cause it to bake unevenly.
Once the bananas are mashed, add 1/2 cup melted butter, 1/2 cup brown sugar, and 1/2 cup white sugar and stir until combined. Add 2 eggs, 1/2 cup sour cream, and 2 teaspoons vanilla extract, and stir until combined. When combined, gently stir in 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/2 teaspoon of cinnamon.

IMPORTANT: We mix by hand to achieve a dense and moist texture for you! Using an electric mixer will beat too much air into the bread and affect the texture.
Finally, mix in a tablespoon of cornstarch, 1/2 teaspoon of salt, and 1 1/2 cups of flour and stir until combined. You don’t want to mix it any longer than it takes for the dough to come together or it will become dense and chewy. Warning: Do not mix!
What happens when you mix banana bread flour? It becomes dry instead of wet. It is important to mix all the ingredients until they are combined. This is why I highly recommend mixing by hand (not with an electric mixer).
Fill the heavy batter almost all the way, leaving about 1/2″ more at the top. This recipe doesn’t rise as much as other quick bread recipes but you still need to leave room at the top for expansion.

Pan Tips: Because “regular” bread pans come in a variety of sizes (some wider than others and therefore more compact), you may end up with extra batter. You can put any extra in the muffin tins and bake for 18-20 minutes.
Bake in the lowest or middle setting of your oven at 350 degrees for 60 minutes. Important: At 45 minutes of baking, gently cover the top of your bread with foil to prevent browning.
Test for doneness by inserting a toothpick or skewer into the center while in the oven. If it comes out clean (or a crumb or two) it is fully cooked.
Tip for placing the oven: It should not be too close to the top or the top of the bread will brown faster than the inside can cook.

Once cool, use a large straight knife to cut the banana bread. I like to cut it into thick slices, the moisture shows up that way! Top with butter and enjoy with a glass of milk for breakfast!
Tip: For the best slices, you’ll need to let the banana bread cool in the pan for an hour to set and cool. If you are not eating immediately, cover with foil and refrigerate.
I will also say that this banana bread is even better on day 2. I mean, warm banana bread with butter is good, but trust me, it’s better the next day after all the banana flavor has melted. I’m picky, but on day 2 I’d say this is the best banana bread recipe in the world.
If you want to know how to keep banana bread moist, here’s a trick! Place two pieces of paper towel around your bread, then wrap the banana bread in plastic wrap while still slightly warm (not hot). While plastic traps moisture inside, paper towels help absorb moisture, making them softer. Alternatively, you can store the bread in a gallon Ziploc bag.
