Easy Banana Bread (no Mixer!) Recipe

Before you start, preheat your oven! Even if your oven beeps and tells you it’s hot after 5 minutes you want to give it at least 20 minutes to preheat (because trust me, 90% of ovens are dormant and nowhere near when they say they are!).

A properly heated oven will help your banana bread get that nice dome and bake! If you want to learn how to make perfect banana bread, the oven is the first step!

In a large mixing bowl, mash 1.5 cups (about 3 large) bananas with a fork until mashed. Make sure you break any large chunks or pieces of banana into your bread which will cause it to bake unevenly.

Once the bananas are mashed, add 1/2 cup melted butter, 1/2 cup brown sugar, and 1/2 cup white sugar and stir until combined. Add 2 eggs, 1/2 cup sour cream, and 2 teaspoons vanilla extract, and stir until combined. When combined, gently stir in 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/2 teaspoon of cinnamon.

IMPORTANT: We mix by hand to achieve a dense and moist texture for you! Using an electric mixer will beat too much air into the bread and affect the texture.

Finally, mix in a tablespoon of cornstarch, 1/2 teaspoon of salt, and 1 1/2 cups of flour and stir until combined. You don’t want to mix it any longer than it takes for the dough to come together or it will become dense and chewy. Warning: Do not mix!

What happens when you mix banana bread flour? It becomes dry instead of wet. It is important to mix all the ingredients until they are combined. This is why I highly recommend mixing by hand (not with an electric mixer).

Fill the heavy batter almost all the way, leaving about 1/2″ more at the top. This recipe doesn’t rise as much as other quick bread recipes but you still need to leave room at the top for expansion.

Best Banana Bread Recipe Ever

Pan Tips: Because “regular” bread pans come in a variety of sizes (some wider than others and therefore more compact), you may end up with extra batter. You can put any extra in the muffin tins and bake for 18-20 minutes.

Bake in the lowest or middle setting of your oven at 350 degrees for 60 minutes. Important: At 45 minutes of baking, gently cover the top of your bread with foil to prevent browning.

Test for doneness by inserting a toothpick or skewer into the center while in the oven. If it comes out clean (or a crumb or two) it is fully cooked.

Tip for placing the oven: It should not be too close to the top or the top of the bread will brown faster than the inside can cook.

The Best Banana Bread

Once cool, use a large straight knife to cut the banana bread. I like to cut it into thick slices, the moisture shows up that way! Top with butter and enjoy with a glass of milk for breakfast!

Tip: For the best slices, you’ll need to let the banana bread cool in the pan for an hour to set and cool. If you are not eating immediately, cover with foil and refrigerate.

I will also say that this banana bread is even better on day 2. I mean, warm banana bread with butter is good, but trust me, it’s better the next day after all the banana flavor has melted. I’m picky, but on day 2 I’d say this is the best banana bread recipe in the world.

If you want to know how to keep banana bread moist, here’s a trick! Place two pieces of paper towel around your bread, then wrap the banana bread in plastic wrap while still slightly warm (not hot). While plastic traps moisture inside, paper towels help absorb moisture, making them softer. Alternatively, you can store the bread in a gallon Ziploc bag.

Of course! To freeze, wrap the bread in several types of plastic, then place in a freezer bag or container. This keeps the banana bread moist and can be refrigerated for up to 3 months.

Yes! You can adapt this recipe to make Moist Banana Bread Muffins. Fill the greased muffin tips with 4.5 tablespoons of batter (3/4 full) and bake for 18-20 minutes until a toothpick comes out clean. This will give you about 12 standard muffins.

Don’t have bananas on hand or don’t want to wait for them to ripen? Did you know that you can ripen bananas in the oven (and without a paper bag!). Place the bananas (with the peel still intact) on a rimmed baking sheet at 300 degrees for 30-40 minutes. The bananas turn black and all the insides caramelize. Hoy for early ripening bananas!

The best color for ripe bananas to use in banana bread is brown, mostly brown or black. In general, the better! The bananas pictured below are good, although I prefer them brown!

Tip: I like to use fresh bananas for the moistest banana bread. I find that fresh bananas have more banana flavor and make for an even tastier banana bread recipe.

If you don’t have sour cream, you can substitute Greek yogurt (you can use low-fat sour cream). Mix the curd well before kneading to avoid all the liquid juices from being too much in the dough.

Trust me, once you try this moist banana bread recipe with sour cream, you’ll never be able to do without it again!

I haven’t tried it but I suspect it changes the taste and flavor of the bread. If you try it, be sure to give feedback! I have received many requests over the years for easy banana bread without vegetable oil, and this version with melted butter is the best!

No, cornstarch and cornstarch are two different things. If you don’t have access to cornstarch, leave it out of the recipe. Your bread may not be moist.

I’ve made this recipe before using gluten-free all-purpose 1-to-1 flour and it turned out great. It’s not as wet or “bendable” as the usual version, but it’s great for gluten-free or celiac. Check all your ingredients to make sure they are compatible with your allergies.

Of course! You can turn this into a super moist banana bread recipe by adding 1/2 cup of toasted walnuts or raisins. Or make chocolate chip banana bread by adding 1 cup of sweet chocolate chips!

Can I replace the sour cream with something else? If you don’t have sour cream, you can substitute Greek yogurt. Mix your yogurt well before mixing to prevent all the liquid juices from being too much in the batter.
