Usually when baking soda is used in a recipe, it is also used with something acidic like butter, lemon juice, or applesauce (used in this recipe).
Recipes like muffins, cookies, and quick breads need a leavening agent like baking soda to give them the right texture.

Sugar Free Banana Bread Muffin ♥
I use organic almonds in this recipe to keep it sugar-free, especially for this mulberry baking dessert. It works well in baking with a 1:1 ratio of table sugar. It has zero calories, no carbs, and won’t spike your blood sugar.
Use your favorite dessert. If you use stevia or artificial sweeteners, you will need to change the serving. Since grass yields are 1:1, you can follow your normal calculations.
If you don’t care about the amount of sugar used, you can also use 1/2 cup of pure honey.
I like the taste of butter in my bread, but I halved the usual amount of butter and used unsweetened applesauce.
Healthy Banana Bread
I don’t recommend substituting all of the butter described in this applesauce recipe for bulk. You will need oil. Alternatively, you can substitute 1/2 teaspoon of the oil with coconut oil or avocado oil.
Allow the bread to cool completely before freezing. Wrap the loaf in plastic wrap and place in a resealable bag. Freezes up to 4 months.
