Spelt Flour Bread Machine Recipe – As many of you know, shortly after we started our journey into Toad’s Mill, Mr. Toad we became Mr. He and I never claim to be the world leader in baking, we make homemade bricks or one of the real deli breads (with a secret lamb kebab to die for!).
Borrowing a bread machine from my wonderful aunt and uncle is a true blessing in disguise, we’re even lucky enough to have our own special spelled bread. Well, spelled flour is widely known for being crumbly and proving faster than your average flour – because of its high protein content and the quality of Toad’s Mill flour, it’s a very dynamic and tasty flour. .
Spelt Flour Bread Machine Recipe
I’ve been messing around with bread machine after recipe, rehydration up, down, and six months later and I think I’ve finally cracked the art of making light spelled bread. It’s always a great feeling when you lift the lid after three beeps and see a perfectly risen loaf; I’ve been surprised a few times with extra cuboid/square bread, but this is perfect for lunchbox sandwiches with roast beef and horseradish left over from Sunday and still has a nice, sweet flavor.
Walnut Whole Wheat Bread
Below is the recipe I used in the bread machine I preheated the night before so that the bread for the breakfast bacon sandwich was ready in warm bread heaven.
Place the ingredients in the bread bowl as described above, yeast first and water last so that the yeast does not soak immediately.
If you have a ‘special’ setting on your machine use that ‘large bread’ setting, baking usually takes 4 1/2 hours to produce a well risen loaf. You can try the “normal” setting, but this can result in a square loaf, since the spelled is much faster than the normal flour and therefore it loses some of its lift. Spelled cinnamon sourdough bread is one of my favorite breakfasts. No one else in my house likes it, so I grab a few slices and freeze the rest while I open the bread in the bread machine. I love toast but I don’t like store bought bread, so here is a quick and easy breakfast that is perfect for me.
The bread is dense and very heavy. This is because all spelled flour is made from it. If you prefer a lighter crumb, use plain spelled flour if desired. I love the density of spelled cinnamon bread as it holds the bread well; I find that spelled bread is a bit soft when baked.
Mom’s Spelt Bread
The bread has a lot of cinnamon (if possible use too much cinnamon) instead of the usual raisins I chose sultanas. I think they soak up the bread better, but you can use raisins if you prefer.

Forget powdered milk. This spelled bread works wonders, without additives or dairy. The original recipe was made for your baker. But if you don’t have one, don’t worry, you can do it by hand! Kamut® Khorasan And Wholemeal Spelt Bread
Use the original spelled bread ingredients, but substitute 1 tablespoon of active dry yeast for the baker’s yeast. Follow these instructions:
In terms of ingredients, this recipe is dairy-free/dairy-free, egg-free, nut-free, peanut-free, soy-free, vegan, plant-based, and vegetarian. Just make sure you choose the right milk drink for your dietary needs.
All bread makers are different, so be sure to follow your own instructions for adding ingredients, rounds, browning, etc. I use whole spelled flour, but you can substitute whole spelled flour if you prefer.

Bread Machine Sprouted Grain Bread
I have been baking spelled bread in my bread machine for several years. Sometimes I make bread and bake the bread on the spot. Sometimes, like these spelled buns, I machine the dough and then do the rest by hand. I love spelled flour (obvs), but sometimes I find how it behaves in bread a bit unpredictable. The separation is greater than with regular flour and the bread may be baked with a slight twist.
I tried everything to prevent that. Although it does not affect the taste and flavor, it can make the special flour bread look ugly (oh, poor bastards). I find that letting the bread rise longer before baking and using a lower temperature helps. I also scored them before putting them in the oven. I have also tried steaming bread in the past.
By this time (when the pictures were taken) the fluffy buns had risen well enough to melt once they were baked. I liked it though. It made mids well. If you don’t want them to be, just separate the dough balls.
I’ve done this process a million times (or so it seems) and it never fails. I have also used the sourdough method to make delicious bread recipes.
