Simple Mills Banana Muffin Mix Recipes – The Best Paleo Pumpkin Banana Bread Muffins use my favorite mix from Simple Mills and a few other healthy ingredients
I don’t think this is a muffin recipe lover. But these pumpkin banana muffins are seriously some of the best muffins I’ve ever eaten.

Probably because Simple Mill does half the work for us here, so the amount of effort we put in is minimal.
Healthy Gluten Free Banana Muffins (dairy Free!)
It took me until October to combine banana bread AND pumpkin bread into a perfect muffin. And part of me thinks that it is taking too long, but another part of me is too busy to let these bad boys down.
I personally find Simple Mill’s Pumpkin Muffin & Bread mix to be one of their most underrated products. But again, I absolutely love everything they do. So picking a favorite is almost impossible. Obviously for fall the pumpkin mix is my favorite, but I also cook and snack on everything they have to offer.
Their mixes are grain free, no refined sugar, scary oils or anything else. These are items that we use in our own kitchens but come in a ready-to-prepare box.
I just added some mashed bananas to it in addition to the ingredients required for the mix. And I added extra almond flour because the mashed banana adds a little extra moisture to the recipe.

These muffins are bakery style. Our very own paleo bakery-style pumpkin banana bread muffins have never been this delicious or this easy!

This Double Chocolate Chunk Banana Bread Bar has to be one of my favorites on the blog. Also my Mom recently finished and she said this is her personal favorite banana bread recipe so far. It doesn’t taste too sweet either, so I know it’s a winner. I wanted to make a banana bread bar that wasn’t too sweet or dessert-like and this looked perfect.
These banana bread bars are the perfect quick breakfast bar, after school snack or even as a dessert. I ate it when that 3pm sweet tooth kicked in and felt nothing but full afterwards. Because it’s sweet, it’s filling and it’s delicious to eat when it’s clean.

. But seriously. They are fool proof. I recently made their chocolate muffin & cake mix for my brother-in-law’s birthday and he loved them. No one believed me when I said it was made with almond flour and coconut sugar.
They also have some delicious products for you to enjoy. They have pizza crusts, breads, cookies, pancake batter and more. All gluten and dairy free. They also launched a new line of crackers made with almond flour and they are amazing. We dip it in hummus, guac, you name it. Basically Simple Mills is the best.. ever.
For the Double Chocolate Chunk Banana Bread Bar, we used their banana muffin mix. You just need to add these 6 simple ingredients and you’re good to go. Almost too good to be true. And you can probably include eggs with flax eggs if you’re making it plant-based. I haven’t tried it yet but I’m sure it will work.

This banana bread is also the best because it tastes hot AND cold. I put some in the fridge to try and I really liked how cold it was. Also put some in the microwave to reheat so the chocolate chunks are nice and melted. You will love it.

I whisk together 2 large eggs, 1 cup of low-fat kefir, and 2 tablespoons of grapeseed oil before adding to the baking mix. You can use 1 cup of water instead of kefir, but on the box, it suggests kefir for etra moist muffins, so I decided to try it, since I have some at home. I also added 2.7 ounces of chopped Mexican chocolate, which I stirred in after combining all the other ingredients. The box says the batter makes 12 muffins, but with the muffin scoop I used, I only got 10. I bake them for 25 minutes in a 350 degree oven in a muffin pan that I greased with a little butter. I let them sit for a few minutes before serving. Next time, I’ll check the muffins after 20 minutes to see if they’re done, because I think they may have undercooked.
Small Batch Pumpkin Banana Muffins
The mix contains almond flour, banana, organic coconut sugar, arrowroot powder, organic coconut flour, baking soda, and sea salt. It is gluten-free, dairy-free, soy-free, grain-free, non-GMO, paleo-friendly and low-carb.
I used Taza cinnamon Mexican chocolate discs, which I bought at Whole Foods. They are gluten-free, dairy-free, soy-free, vegan, organic and non-GMO.
My husband and I like the banana muffins, but my son prefers the Simple Mills Chocolate Muffin Mix, which you can read about here. I freeze all the leftovers, and thaw them for a minute in the microwave when we’re ready to eat them, which makes for a quick and easy breakfast. Next time, I may add mashed banana to the mix to add banana flavor.
