The beauty of this banana bread recipe is that you don’t need a fancy blender. All you need is a bowl, a fork to beat the eggs and a sturdy spoon to knead the dough. The amount of sugar is flexible. The original recipe called for a cup of white sugar, but most people, including myself, are fine with 3/4 cup, and many are happy with 1/2 cup.

You can add a cup of chopped nuts, raisins or chocolate chips if you prefer, or put the batter in a muffin tin and make banana muffins. You can even take it a step further and make chocolate banana bread.

Easy One Bowl Banana Bread Recipe

This recipe calls for an 8×4-inch pan, which makes tall loaves. The recipe will also work in an 8 1/2 x 4 1/2 inch pan, resulting in slightly shorter loaves. Because the pan is slightly larger, the cooking time is shorter: 47 to 57 minutes. A 9×5-inch pan will make very short but still delicious scones; bake for 45 to 55 minutes.

You don’t need a blender for this recipe! Cleaning it is also easy. If you want, you can mix everything in a bowl.

If you have overripe bananas and you’re not ready to cook them, don’t waste them, freeze them! I usually freeze them in 2 or 3 bags, since when pureed they usually make about 1 cup (which is what most banana bread recipes call for). Simply peel the bananas and place them in an airtight container or freezer bag; when ready to use, melt in a bag and then puree.

Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding a lemony flavor to the bread. Similar to sour cream or buttermilk, it adds acidity to the dough that reacts with the baking soda to help the bread rise and give it a beautiful golden color, toasty flavor, and light, creamy texture.

In the bowl of an electric hand mixer (or stand mixer), beat the butter and sugar until light and fluffy, about 2 minutes.
