Simple Banana Bread Recipe 2 Bananas – My banana bread recipe since 2013, and it’s the BEST!! This recipe makes two of the most moist and flavorful breads with simple ingredients and just a wooden spoon! The only banana bread recipe you will ever need!!

First, a quick warning. I am guilty of claiming that some of my recipes are the best of the best. I realize it’s quite subjective. But I promise you, I don’t take this term lightly.

This banana bread recipe is my favorite since 2013! And yes, I have tried other recipes too, but I always come back to this one. I wouldn’t lie if I said I make this quick bread recipe almost weekly and it never lasts longer than 3 days!

But over the years, I’ve found that frozen ripe bananas make a good banana bread that I can’t stop eating!

Because when thawed, bananas are super soft and runny. And all that juice is gold! Do not discard the liquid, it leaves the bread moist and tasty.

When you get nice, ripe bananas with lots of dark spots all over, put them in the freezer. (And yes, black bananas are perfectly fine to use!)

Use a very large bowl to make the dough. I use a 4 qt bowl (the biggest bowl in this set).

To check for doneness, insert a long wooden skewer or toothpick. If it comes out clean, the bread is ready!

And if you prefer to make half a serving (only 1 loaf or 12 muffins), follow the banana muffins recipe. It’s the same recipe, but for half a batch.

But I always put it in the fridge. Mainly to keep them out of sight, otherwise they will be gone in a few hours.

To keep banana bread moist, cover it with plastic wrap or place it in an airtight container.

To serve, I pop a slice in the microwave for 30 seconds or so and it will taste fresh out of the oven!

It’s a constant game in our kitchen. We ALWAYS have bananas hanging from a hook on our counter. We buy every week. Often when we put them in the store, they are a little too green. At the same time, we have leftovers from last week, but they are a little too ripe to eat. Ahhhh! It’s a no-win situation.

Of course, while I just have to wait for the greens to mature, there are a lot of things I can do with the stained ones. This blog is FULL of delicious recipes with ripe bananas. From fresh and fruity Strawberry Banana Muffins and Blueberry Banana Muffins to classics like Banana Cream Pie and Banana Cake, there is no shortage of delicious uses for ripe bananas. But we don’t publish a recipe here, a good old banana bread! Well, that changes today!

And we’re not just going to post a banana bread recipe. Here at Bubba Pie, we are pure and simple. Also, many banana bread recipes call for at least 3-4 bananas? What if you only have one couple? That’s the exact scenario I’m in almost every week! With this recipe, you get a delicious banana bread flavor without having a bunch of overripe bananas lying around!

The most important thing with your bananas is making sure they are ripe enough. As bananas start to ripen, the starch in them starts to turn into sugar and they soften. So one way of saying it is that they are softer to the touch. They will also start to have brown spots on their shell. A perfectly ripe banana for banana bread will be nice and soft and have a fair amount of brown spots. If there’s ANY green on the skin, they probably won’t make a very good banana bread. On the other hand, make sure they are not overripe as they may have mold at this point.

As I mentioned above, since this is a 2 banana bread recipe and we only use 2 bananas, they really need to be a good size. Other than that, the actual mark on the banana doesn’t matter.

Healthy No Added Sugar Banana Bread

Banana bread does not need to be refrigerated. Works great at room temperature on your bench. Store in an airtight container to maximize freshness. We recommend one like this, which every kitchen should have! Banana bread should stay fresh in a container like this for up to about 1 week.

You can easily freeze banana bread. Just let it cool completely. Then wrap in aluminum foil or freezer bag. It keeps well in the freezer for about 5 months. You can freeze whole bread and thaw if needed. Or you can cut the bread into slices and freeze them separately, or at least separate them with parchment paper. So you only need to defrost what you need!

When the dough is ready, grease a 9×5 mold with non-stick spray and line with parchment paper. The parchment paper is completely optional, but it will make it a lot easier when taking the bread out of the pan.
