This banana muffin recipe has a few basic ingredients like flour, sugar and milk. That’s what I like to cook – the ingredients are the same for everything.

Do these banana muffins taste like banana bread? Yes, of course! But it is lighter, softer and buttery. You will like it very much.

There’s a fine line between a moist banana muffin and a dry banana muffin, even parchment paper in a cupcake wrapper. Use a solid ratio of dry to wet ingredients to keep the banana muffins moist. I found the buns were dry without water, but a couple of tablespoons of milk solved the problem. Use low fat (butter), brown sugar, and lots of bananas for maximum moisture and flavor.

So I started making it last year and it’s been almost every time I make banana cake, these breakfast cookies, or banana bread. Just use a blender to mash the bananas! Peel, cut into blocks, place in a blender and blend until thickened. Sift the remaining wet ingredients into this bowl and mix with the dry ingredients. It’s that simple.
