Banana Bread is made with simple ingredients. If you need more bananas, it is better to use the “lakatan” variety. We use Lakatan bananas because they are widely grown in the Philippines. Lakatan fruit or “Lakatan” is not distinctive in smell and taste, strong when ripe. Lakatan bananas are classified as the best quality banana cultivars, sometimes popularly known as desert, as opposed to the Cavendish or Latundar varieties. Characteristics of Lakatan bananas include orange color when ripe and dark yellow. Ripe fruits are more aromatic and firmer than other types of bananas, with sweeter fruits. If you don’t have ripe bananas, you can easily grill them on the stove or in a pan. To ripen your bananas, cook them with their skins on or cook them on high for 40 minutes. Allow the cooked bananas to cool before making the banana bread in the oven or pan.

Once the bananas are ripe, peel off the skin and place the bananas in a bowl. Mash the banana well with a potato masher or fork. Add all the eggs, vanilla and oil to the fried bananas and mix well with a whisk. Add the powdered sugar and mix well until the sugar dissolves. In a bowl, combine the all-purpose flour, baking soda, and salt and stir into the banana mixture. Add after filtering completely through a fine sieve. Line a baking sheet with parchment paper. We can use a toothpick to know if the banana bread is completely done. Insert the toothpaste into the center of the banana bread. If it comes out clean, your banana bread is good. Let it cool down a bit. Use a knife on the side of the bread to easily remove the banana. Turn the pan upside down and gently remove the pan. Remove the parchment paper and gently press the banana bread to spread the surface of the bread. Then turn it over and cut the banana bread into desired size. Your banana bread is ready to serve. I’ve also played with half butter and half milk (about 1/3 cup) with good results. If you want to skip the butter all together, try using unsweetened applesauce for a banana bread full of banana health—it’s amazing!
