Some people are banana bread purists, others prefer chocolate chips, but I’m in the nutty category (and if I’m honest, I’ve never met a banana bread I didn’t like). This is a delicious, moist banana bread recipe that is almost fail-safe. It symbolizes comfort and happiness, and by the end of the week, I always see bananas around.

I created this recipe using specific ingredients to make this bread as moist as possible. Bananas, oil, butter, and butter all add moisture to banana bread so it’s still soft and fluffy when baked. Also, watch the clock while you cook it so you don’t overcook it! Overripe, black and dry bananas are not tasty.

Vegan Banana Bread With Toasted Walnuts And Coconut

I use this light colored loaf pan, which won’t darken the sides as quickly. Since the bread usually takes about an hour in the oven, you want to limit the browning on the sides. If you use a non-stick, dark metal pan, you’ll get really crispy edges. If you like crispy edges, more power to you. But I prefer a soft loaf, and a light loaf pan is the way to get it. Once your bread is out of the pan and has some crisp edges, wrap it in plastic wrap while it’s still warm (not considered hot) for an hour or two. This will soften those edges.

Nuts contain oils, and if they sit on your pantry shelf for a while, those oils can go bad. This goes for any nut, not just walnuts! If you try a nut right out of the package, you can tell if it’s rotten. (It should have a strong, unpleasant flavor.) Since half of this recipe is banana and the other half is basically nuts, you want to make sure you’re using the tastiest and freshest.

This is the rule of thumb for any type of bread recipe. If you want clean and beautiful pieces, wait until it cools completely. If you really don’t care, cut it out! Hot banana bread is hard to beat, even if it’s not quite the picture.

Gradually add the dry ingredients along with the yogurt until a smooth dough comes together. Stir in the chopped walnuts by hand. Pour the prepared bread into the pan and top with more nuts.

Store the eaten banana bread in a Ziploc bag or airtight container on the counter, usually for 4 days, to keep it as moist and soft as possible. After that, it is still good to eat, you will see that it dries up a little.

This recipe calls for an 8- x 4-inch loaf pan, which makes one long loaf. The recipe will work in an 8 1/2- x 4 1/2-inch loaf pan, which will yield a slightly smaller loaf. Because the pan is slightly larger, the cooking time is shorter: 47 to 57 minutes. A 9- x 5-inch pan will produce a particularly small but still delicious loaf; Bake for 45 to 55 minutes.

No mixer required for this recipe! Cleaning is also easy. If you want, you can mix everything in a bowl.
