Preheat oven to 325 degrees. Generously grease the bottom and sides of a loaf pan with cooking spray or butter, and sprinkle it generously with almond flour. (Don’t skip this step or your bread may stick! See photos.)

It took me a while to find the right mix of flour. What I usually use, the result is more dense than I intended. So I ordered some flour from the US to try other blends that use white rice flour, tapioca starch, potato starch and xanthan gum.

I mentioned that I have to order some flour from the US because every time I use tapioca flour/starch that I buy here, none of the recipes I’ve tried online work. I mean dishes with good reviews! So obviously I’m the problem, not the recipe.
I’ve read that the tapioca flour/starch you find at Asian grocery stores may give you different results, but the stuff I buy is the expensive, factory-organic stuff. So I don’t care where it comes from. They are just different.

If you don’t have a stand mixer or hand mixer, you can make banana bread in a bowl with just a whisk and whisk. Mix softened butter and sugar with sugar syrup. Beat the eggs one by one, then add the cream, mashed banana and vanilla extract. Beat until smooth. Fold in dry ingredients followed by walnuts.
The result is a little softer than butter and sugar cream, but still very tasty!
This recipe was tested in a 9 x 5 loaf pan (measured from the inside of the top rim), but bananas are so forgiving, it should work in any size loaf pan you can find.
Adjust baking time accordingly: A smaller pan will bake a longer loaf and require more baking time, a larger pan will have a smaller loaf and it will take a few minutes to bake.
Classic Gluten Free Banana Bread (vegan, Allergy Free)
I recommend a metal baking pan and clean rolling pin for this gluten-free banana bread. Since this bread is baked for more than an hour, the more insulated the glass pan, the more crisp and dark the crust is, and the more likely it is to burn.
One thing I’ve learned: Each of my neighbors has several different sized metal pans. If you have a glass jar, hopefully you have neighbors like me who will lend you one in exchange for a few slices of banana bread.
If you choose glass bread, reduce the temperature to 25°C and bake for about 10 minutes. If you find that the top starts to darken too much with longer baking time, cover it lightly with foil.
