Quick & Easy Banana Muffins

First, a quick disclaimer. I am guilty of claiming that some of my recipes are the best. I realize that is very subjective. But I promise you, I don’t take that term lightly.

I have loved this banana bread recipe since 2013! Yes, I have tried other recipes, but I always come back to this one. I wouldn’t lie if I said that I make this quick bread recipe almost every week and it never lasts more than 3 days!

However, over the years, I have found that frozen overripe bananas make a good banana into an unstoppable one!

This is because when the banana melts, it becomes very thick and runny. All those juices are gold! Do not discard the liquid, it makes the bread moist and fragrant.

Ingredient Banana Bread

Place good, ripe bananas in the freezer when they are full of black spots. (Yes, black bananas are perfectly fine to use!)

Use a very large bowl to make the batter. I use a 4qt bowl (the largest bowl in this set).

To test for doneness, insert a long wooden skewer or toothpick. If it comes out clean, the bread is ready!
