I love Costco’s banana bread, but I find it too sweet for my taste, but I love moist. I’ve been meaning to make my own version for years, but it’s a little too sweet or too sweet for my taste. I’ve been making banana nut bread for decades, and it’s safe to say I’ve had plenty of time to perfect it.

Banana nuts can be wrapped tightly in plastic wrap or stored in an airtight container. It will keep for 3 days on your counter and up to a week in the fridge. I like to microwave the banana slices for 20-30 seconds to soften them, especially if they’ve been in the fridge.

If you have ripe bananas that aren’t ready to bake, don’t let them go to waste—freeze them! I usually freeze 2 or 3 bags, and when mashed, they usually make 1 cup (the banana bread recipe calls for it). Simply peel a banana and place it in a sealed container or freezer bag; when ready to use it was melted in a bag and then mashed.
Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding lemon flavor to the bread. An acid is added to the dough, like cream or butter, which reacts with the baking soda to raise the bread and give it a golden brown, toasty, and lightly flaky texture.
In the mixer of an electric hand mixer (or stand mixer), beat together the butter and sugar until light and fluffy, about 2 minutes.
