Every oven is different, so don’t worry if the bread isn’t ready after 45 minutes. Have a clean toothpick ready and test the bread by inserting a toothpick into the center of the loaf. If it comes out doughy, add 5-10 minutes at a time until the brush comes out clean.

If you want a dairy-free version, skip the yogurt and add applesauce instead. This is what I always do because the hub goes through phases and in the last phase he thought he was lactose intolerant so I had to make him all kinds of dairy free food.

1. Place bananas on a baking sheet and bake at 250F for 10-20 minutes. It depends on how ripe your bananas are. Keep an eye on it and add time whenever you want.

On the extra day, put the bananas in a paper bag and fold the top over to seal out the air. This puts them in their own ethylene-filled bag, which causes them to ripen. Adding apples, figs, or pears to the bag will help it ripen a little.

Easy Banana Bread Recipe: How To Make It

If you have ripe bananas that aren’t ready to bake, don’t let them go to waste—freeze them! I usually freeze 2 or 3 bags, and when mashed, they usually make 1 cup (the banana bread recipe calls for it). Simply peel a banana and place it in a sealed container or freezer bag; when ready to use it was melted in a bag and then mashed.

Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding lemon flavor to the bread. An acid is added to the dough, like cream or butter, which reacts with the baking soda to raise the bread and give it a golden brown, toasty, and lightly flaky texture.

In the mixer of an electric hand mixer (or stand mixer), beat together the butter and sugar until light and fluffy, about 2 minutes.

Pour the batter into the prepared loaf pan and bake for 40-45 minutes until a tester inserted into the center comes out clean.
