The beauty of this banana bread recipe is that you don’t need a fancy mixer! A mixing bowl, a fork for beating eggs, and a sturdy spoon for kneading dough is all you need. The amount of sugar is flexible. The original recipe calls for a cup of white sugar, but most people, myself included, do well with 3/4 cup, and many are happy with 1/2 cup.

You can add a cup of chopped nuts, raisins, or chocolate chips if you like, or put the mixture in a muffin tin and make banana nut muffins. You can even go one step further and make chocolate banana bread.

This recipe calls for an 8 x 4 inch loaf pan, which makes for tall loaves. The recipe can also be used in an 8 1/2- x 4 1/2-inch loaf pan, resulting in slightly shorter loaves. Because the pan is relatively large, the baking time is shorter: 47 to 57 minutes. A 9 x 5-inch pan will make very short but still delicious buns; bake for 45 to 55 minutes.
