Quick Easy Banana Bread Recipe – If you’re anything like me, you need some good banana bread recipes. I’ve never been able to accurately predict my family’s banana consumption: one week we go through them all, and the next they’re sitting untouched brown in the bowl. This Tender Banana Bread with Crunchy Crust is my basic banana bread recipe (click here if you’re looking for marbled, chocolate, tea spiced, whole wheat, or coconut flavored versions). The bread is exceptional straight out of the oven and wonderfully toasted for breakfast the next day. My family likes it plain, but feel free to add nuts or chocolate chips if you like.

For really moist, banana-like banana bread, use very ripe bananas. In any case, the color of the banana should be deep yellow with many brown spots and it is okay if the skin is completely browned.

If you have overripe bananas that you’re not ready to cook yet, don’t let them go to waste – freeze them! I usually freeze them in bags of 2 or 3 because they usually yield about 1 cup when pureed (which is what most banana bread recipes call for). Peel the banana and store in an airtight container or freezer bag. When ready to use, thaw and mash them in a bag.

Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding lemon flavor to the bread.
