Some people are banana bread and others prefer chocolate chip, but I’m in the nut category (although if I’m being honest, I’ve never met a banana bread I didn’t like). This is a delicious, firm, and moist banana bread recipe that’s almost foolproof. It’s the epitome of comfort and joy, and at the end of the week, I always seem to spot bananas.

I made this recipe using special ingredients to keep this bread as moist as possible. Things like mashed bananas, oil, butter, and buttermilk add moisture to banana bread so it’s still soft and chewy when baked. Also, keep an eye on the clock while cooking this so you don’t overcook it! Overcooked, dark and dry banana bread is not tasty.

Classic Banana Bread Recipe

I use this pale tin that doesn’t darken the pages too quickly. Since the loaves usually sit in the oven for about an hour, you want to limit browning on the sides. If you use a darker metal non-stick pan, you’ll have really crispy edges. If you like crispy edges, then more power to you. But, I like a soft loaf and I think a lighter colored pan is the way to go. If you pull the bread out of the pan and it becomes crusty around the edges, wrap it in plastic wrap for an hour or two while it’s lukewarm (so it doesn’t mix with hot). It smooths the edges properly.

Nuts contain oils, and if they sit on the pantry shelf for too long, those oils will go rancid. This goes for all nuts, not just walnuts! If you taste a nut from the package, you should know if it is rotten. (It should have a stronger, unpleasant taste.) Since half of this recipe is bananas and the other half is basically nuts, you want to make sure you’re using the tastiest and freshest ones.

This is just a rule of thumb for any type of bread recipe. If you want clean, beautiful cuts, wait for them to cool completely. If you really don’t care, leave it out! Warm banana bread is hard to beat, even if it’s not quite perfect.

Nut Free Banana Bread

Slowly add the dry ingredients with the buttermilk to form a smooth batter. Stir in the chopped walnuts. Pour into the prepared bread pan and add more nuts.

Bake until a toothpick comes out clean with a few moist crumbs. Cool for at least 15 minutes before removing from the hot pan and slicing.

To freeze: Let the bread cool completely. Wrap the bread in 2-3 layers of plastic or aluminum foil before placing in a ziplock bag or freezer container. Banana bread stays fresh for 3 to 4 months in the freezer.

For really moist banana bread, use very ripe bananas. Bananas should be at least dark yellow with lots of brown spots, and it’s okay if the skin is completely brown.

If you have overripe bananas that you’re not ready to cook, don’t let them go to waste – freeze them! I usually freeze them in bags of 2 or 3 because when mashed, they usually make 1 cup (which is what most banana bread recipes call for). Simply peel a banana and place it in a sealed container or freezer bag. When they are ready to use, melt them in a bag and then crush them.
