Happy Monday friends! Over the past year, my Honey Oatmeal Bread recipe has become popular. That recipe has good reviews in the comments section and on Pinterest. You’ll love the taste and convenience of using no refined flour, oil or butter. However, one of the most common questions I get is how to modify that recipe to be less sweet.
Oatmeal Bread Recipe No Flour
After getting several requests for a cool version, I decided to try some and see what I could come up with. I knew it would be difficult to reduce the honey because it acts as a binder. I ended up following a reader’s suggestion to reduce the honey and use flax as a binder instead. Even small differences in the amount of salt, hemp, and honey made a big difference in the final product, so I made different versions to get it right.
Easy Honey Oat Bread (gluten Free, Dairy Free Option)
There were so many good versions that I had a hard time deciding which one to post. I know many of you want the honey-free version, but in our opinion (Mr. Badagini and I), the best version is the one with two tablespoons of honey (down from 1/2 cup of the original) in the whole loaf. ). version), so that’s what I’m posting today!
The honey really balances out the salty and sweet tones of the oats and hemp. This bread is perfect for layering with sandwich fixings like avocado, lunch meats, and cheese. I think it’s best used to make an open-faced sandwich as it’s a little more crumbly than a regular sandwich, and if you toast it in the toaster oven it can be a little tough! Oats, Honey And Spelt No Knead Bread
Original Non-Dairy Milk – Any non-dairy milk will work here, but you want the real unsweetened version, not vanilla. I’m not sure if this would work because cow’s milk is high in fat and protein. If you don’t have dairy-free milk on hand, I use just water.
Honey – Brown rice syrup can be used instead of honey. You can omit the honey, but the hint of sweetness really helps balance out the bread and create that traditional sandwich bread flavor.
Ground Flax – Do not discard. Oats version uses honey instead of honey as a binder, don’t leave out. Plus, it’s good for you!
Eggs – I haven’t tried substituting more flax or chia eggs. One version I tried had too much flax and I didn’t like it. Flax can be overdone. Eggs help bind and bread rise, so I’m not sure if leaving out would work. If you try it, let us know in the comments!

In the photo below you can see the slight difference in coloring between the two versions. The honey oat version is a deep brown (bottom right corner) while the flavored version is slightly lighter and tan.

I was sleeping 7 hours a night, but that kind of exercise finally caught up with me. I basically spent Saturday sleeping in, sandwiched between a grocery shopping trip and bowling for a friend’s birthday. I slept for about 4 hours! I guess I’m one of those people who wants to sleep in when they’ve been missing out on sleep all week.
I usually do well in temporary overload situations, and that’s because I’m overloading my plate for the next few weeks to make sure I have steady income this summer. Since I am an adjunct faculty member, I usually do not teach classes during the summer. In the future, when children come into the picture, I see this as a huge advantage, but not now. Of course, I’m proud of everything I accomplished last week, but I’m most proud of this bread!
