This recipe is flexible! Any of the following flours will work well. I like to use white whole wheat flour and whole wheat pastry flour – they offer whole wheat products without a particularly nutty taste.

I like to slice the bread before freezing and thaw individual slices or let them rest at room temperature or lightly toast.
*Oil Alternatives: I like coconut oil here. I used unrefined coconut oil and I can barely taste it in the final product. Olive oil can give the buns an herbal note, if you like it (I tried with the everyday variety of California Olive Ranch and couldn’t taste it). Vegetable oil has a neutral flavor, but regular vegetable/canola oil is highly processed, so I recommend using cold-pressed sunflower oil or grapeseed oil if possible.
**Flour Alternatives: Instead of whole wheat flour, you can use equal amounts of flour, whole wheat pastry flour, spiral flour or gluten-free all-purpose flour. Alternatively, substitute 2 ½ cups oatmeal.
Make it vegan: use maple syrup instead of honey, replace eggs with flax eggs, and choose non-dairy milk (I used almond milk) or water.

Reduce the fat: I’d argue that this bread has healthy fats, but if you’re on a low-fat diet, you can replace the fat with applesauce.

My original recipe for banana bread actually comes from my friend’s dad, Barry (Hi Barry!). The blog post was one of the first things I put up here, it’s quite old so I pulled the recipe back and tweaked it a bit – added some Greek yogurt and finished it off with some crunchy turbinado sugar.
