? This is zucchini bread with applesauce, which means that both applesauce and zucchini replace some of the oil. It makes the texture perfectly moist but not too greasy. With ¼ cup of oil per whole loaf, that’s less than 1 teaspoon per slice! Another of our secrets is the use of turbinado sugar, which gives it an almost caramel taste (more information below). And it’s heavily seasoned with cinnamon – 1 tablespoon is not a typo – it delivers just the right amount of spicy goodness.

You may have noticed that this recipe calls for turbinate sugar instead of traditional recipes that use white or brown sugar. What is this? Turbinate sugar is raw sugar; It has large crystals and a slightly more complex caramel flavor than refined sugar. The different taste is because it is less processed than refined sugar (it is only boiled once to remove the molasses).
While this unfortunately doesn’t make it any healthier than refined white sugar, it does give it a unique flavor. We also added large crystals on top of the bread to give it a satisfying crunch! If you can’t find turbinado sugar, you can substitute light brown sugar: but we recommend you try it if you haven’t already!

If you want to use chocolate chips instead of walnuts and raisins, add about 1 cup; just make sure the toppings (walnuts, raisins, chocolate chips) don’t exceed 1½ cups.
Start by grating the zucchini. I use a food processor, but a food processor works well too. No need to drain the liquid.
Place the pans on a wire rack and let cool for about 10 minutes, then turn the loaves onto the wire rack to cool completely.
Zucchini bread can be frozen for up to three months. Once completely cooled, wrap tightly in aluminum foil, freeze, or place in a freezer bag. Thaw the bread in the refrigerator overnight before serving. Turn individual slices slightly for best results.
