There are at least a dozen recipes on this site dedicated to using up summer leftover zucchini, from zucchini casserole to zucchini fritters, but this classic zucchini bread is my go-to. There is a little bit of chopped pumpkin in the dough, but it magically disappears after baking, and the bread tastes like a spice cake. It’s easy to make and a great way to get kids to eat pumpkin, although you may want to use nuts and pepper for chocolate chips for the kids.

If you want to use chocolate chips in place of the nuts and raisins, add about 1 cup. Make sure total snacks (nuts, raisins, chocolate chips) are no more than 1½ cups.

Start by scraping the pumpkin. I use a food processor, but a box grater works just as well. No need to strain the liquid.

I think this is a good place to start with brownies. It’s made with whole wheat flour for a healthy option that’s high in protein and fiber. Plus, you can’t go wrong with the green stuff inside.

Directions: Mix ground flaxseed with water in a small bowl and mix well. Let stand for at least 5 minutes to thicken. Preheat oven to 350°F, then lightly grease a 1-pound loaf pan (about 9 x 5″). In a large bowl, whisk together the spelled flour, coconut sugar, baking powder, baking soda, salt, and cinnamon. Beat together and set aside. In a separate bowl, whisk together the cinnamon, melted coconut oil, vanilla, flax mixture, and milk. Mix until well combined. Pour the dry ingredients into the bowl with the wet ingredients, then mix until all the flour is incorporated. Add the chocolate chips and mix. I like to save a few for frosting for a pretty display. Transfer the dough to the baking dish and bake for 35 to 45 minutes. Cooking times vary by oven. Mine takes about 45 minutes. Be careful not to open the oven while cooking or it won’t cook properly. You can tell when it’s done by paying attention to its smell. It smells delicious but doesn’t burn. Cool before slicing. Leftovers can be stored in an airtight container for up to 4 days (refrigeration is recommended).
