Moist Zucchini Bread Recipe With Applesauce – This pumpkin bread with walnuts and pepper (or chocolate chips if you prefer) is a great way to use up summer pumpkin.
There are at least a dozen recipes on this site dedicated to using up summer leftover zucchini, from zucchini casserole to zucchini fritters, but this classic zucchini bread is my go-to. There is a little bit of chopped pumpkin in the dough, but it magically disappears after baking, and the bread tastes like a spice cake. It’s easy to make and a great way to get kids to eat pumpkin, although you may want to use nuts and pepper for chocolate chips for the kids.

If you want to use chocolate chips in place of the nuts and raisins, add about 1 cup. Make sure total snacks (nuts, raisins, chocolate chips) are no more than 1½ cups.
Applesauce Zucchini Bread
Start by scraping the pumpkin. I use a food processor, but a box grater works just as well. No need to strain the liquid.
Place the pans on a wire rack to cool for about 10 minutes, then turn the loaves onto a wire rack to cool completely.
Zuvula bread can be frozen for up to three months. Once completely cooled, wrap it in aluminum foil, refrigerate, or put it in a freezer bag. Refrigerate the bread overnight. For best results, cut into small pieces individually.

This apple pie is straight from the garden! I am so happy that I finally raised my own Zulu.
This is my third season of growing and I think I have finally found the perfect spot for my Zulu plants to thrive with lots of sunlight. We harvest pumpkins every few days, so it’s time to cook.
Both the boys and I help nature by carefully observing the flowers and pollinating them by hand to ensure we produce the best pumpkins. Horticulture was a great way to incorporate plant science into our homeschool.
Applesauce Zucchini Bread Recipe With Pecans
This pumpkin bread with apple recipe is slightly modified and contains less sugar and fat. I like that it’s not too sweet.
I didn’t have the cinnamon the old recipe called for, so I added apple pie spice, which tastes delicious – so both would be good.
In this recipe, I also used three eggs that came straight from our chickens. We’ve been enjoying the fake farm life here lately.
We’ve always wanted a little space to try our hand at gardening and raising chickens, but we decided it would work with what we had.

All of my boys loved it, although one boy added that it wasn’t as good as my banana nan, although it was good. Too bad there’s no banana tree in the yard!
This Apple Zucchini Bread is very moist and not too sweet. What a delicious way to use up extra zucchini!

* After shredding the squash, use a paper towel or clean kitchen towel to wring out the moisture. Healthy Vegan Zuvula Bread – Whole grains and no refined sugar, this zuvula bread is perfect for breakfast and tasty for dessert!
I feel like I’ve been slacking on pumpkin recipes this year. So far, all I’ve shared with you is this White Bean Zucchini Burger. Time to step up my game!
I think this is a good place to start with brownies. It’s made with whole wheat flour for a healthy option that’s high in protein and fiber. Plus, you can’t go wrong with the green stuff inside.
For those on a gluten-free diet, I already have gluten-free pumpkin bread on my site, as well as flour-free pumpkin pie. I just didn’t have any vegan pumpkin bread, so I had to change it up.
Healthy Zucchini Bread With Pineapple
If you’ve never tried baking with spelled flour, it’s very similar to whole wheat in that it has a very light, earthy flavor and is slightly denser than all-purpose flour. I love using it because it’s an ancient grain that hasn’t been modified like modern wheat. As a result, gluten is naturally less viscous and may be easier for some to digest.
In addition to spelled, I also used coconut sugar to make the recipe pure sugar free. It also adds a delicious caramel flavor to the cookies, so it’s a win-win.
The main oil source in this recipe is coconut oil, which can easily be substituted for your favorite cooking oil.
If you want to reduce the amount of fat, you can replace half of the fat with apples. I tried this and it turned out well, but we just loved the buttery texture.
The Best Ever Zucchini Bread Recipe With Applesauce
Directions: Mix ground flaxseed with water in a small bowl and mix well. Let stand for at least 5 minutes to thicken. Preheat oven to 350°F, then lightly grease a 1-pound loaf pan (about 9 x 5″). In a large bowl, whisk together the spelled flour, coconut sugar, baking powder, baking soda, salt, and cinnamon. Beat together and set aside. In a separate bowl, whisk together the cinnamon, melted coconut oil, vanilla, flax mixture, and milk. Mix until well combined. Pour the dry ingredients into the bowl with the wet ingredients, then mix until all the flour is incorporated. Add the chocolate chips and mix. I like to save a few for frosting for a pretty display. Transfer the dough to the baking dish and bake for 35 to 45 minutes. Cooking times vary by oven. Mine takes about 45 minutes. Be careful not to open the oven while cooking or it won’t cook properly. You can tell when it’s done by paying attention to its smell. It smells delicious but doesn’t burn. Cool before slicing. Leftovers can be stored in an airtight container for up to 4 days (refrigeration is recommended).

We’re always looking for zucchini recipes this year because our pantry is overflowing with them! My sweet apple and zucchini bread has become a family favorite. It’s so moist and flavorful that it comes together in less than ten minutes.
You can toast and butter this zucchini bread, but you really don’t have to. It’s so good on its own that I’ve been snacking on it all day, even when I have cookies at home.
It calls for both brown and white sugar. I like the strong flavor I get from brown sugar, but if you don’t have it, you can substitute more white sugar.
Best Sugar Free Zucchini Bread With Applesauce Recipes
I recommend using unsweetened apples – smooth or thick is best. If you only sweeten the apples, reduce the sugar in the recipe by 1/4 cup.
This entire recipe uses only 1/4 cup of oil. Apple puree can be used in place of oil or butter in cooking. It’s not always ideal in cakes and pastries, but in this bread it works great – it keeps well.
