To make it vegan: use two flax eggs instead of regular eggs. I haven’t tried it yet, but let me know if you do.

To make it nut-free: Replace the almond milk with nut-free milk and omit the nuts from the recipe.

To freeze: simply wrap in plastic, then wrap tightly in foil and finally in a resealable bag or freezer-safe bag for up to 3 months. Allow to cool to room temperature when ready to eat. Individual slices can be frozen for quick on-the-go enjoyment.

Other fun mix-ins: I think chopped dates or raisins would be wonderful here instead of chocolate chips.

*A note about oil: I love coconut oil here. I used unrefined coconut oil and could not taste it in the final product. Olive oil will add herbs to the bread. Vegetable oil has no flavor, but medium vegetable/canola oil is pretty good, so I recommend using cold pressed sunflower or grapeseed oil if possible.

Go vegan: use maple syrup instead of honey; Replace the eggs with flax eggs and choose non-dairy milk (I used almond milk) or water.

Make it gluten-free: I haven’t tried it myself, but I heard from a reader that Bob’s Red Mill Gluten-Free All-Purpose Mix works great here.

Eat less fat: This bread contains healthy fats, but if you’re on a low-fat diet, you can replace it with applesauce.
