The beauty of this banana bread recipe is that you don’t need a fancy mixer! A mixing bowl, a fork for mixing the eggs, and a sturdy spoon for mixing the batter is all that is needed. The amount of sugar changes. The original recipe called for a cup of white sugar, but most people, including myself, do well with 3/4 cup, and many are happy with 1/2 cup.

You can throw in a cup of chopped nuts, raisins, or chocolate chips if you like, or put the batter in muffin tins and make banana muffins instead. You can go a step further and make chocolate banana bread.

This recipe calls for an 8-by-4-inch loaf pan, which makes a long loaf. The recipe will also work in an 8 1/2- x 4 1/2-inch loaf pan, producing a slightly shorter loaf. Because the pan is large, the baking time is short: 47 to 57 minutes. A 9- x 5-inch pan will yield a shorter but tastier loaf; bake for 45 to 55 minutes.

No blender required for this recipe! Cleaning is also easy. If you want, you can combine everything in one bowl.
