This banana bread has been a popular Easy Recipes recipe for over 10 years. Thousands of people do it every day. Why?

Because it really is the best banana bread recipe ever, period. You can mix everything in one bowl, you can change the amount of sugar or banana. And the secret to its great taste? Melted butter.

The beauty of this banana bread recipe is that you don’t need a fancy mixer! A mixing bowl, a fork for mixing the eggs, and a sturdy spoon for mixing the batter is all that is needed. The amount of sugar changes. The original recipe called for a cup of white sugar, but most people, including myself, do well with 3/4 cup, and many are happy with 1/2 cup.

You can throw in a cup of chopped nuts, raisins, or chocolate chips if you like, or put the batter in muffin tins and make banana muffins instead. You can go a step further and make chocolate banana bread.

I got this banana bread recipe years ago from my friend Heidi H, who, many years before, begged for the recipe from a ski friend’s mother—a lady. Hockmeyer. Thanks Heidi!

This recipe calls for an 8-by-4-inch loaf pan, which makes a long loaf. The recipe will also work in an 8 1/2- x 4 1/2-inch loaf pan, producing a slightly shorter loaf. Because the pan is large, the baking time is short: 47 to 57 minutes. A 9- x 5-inch pan will yield a shorter but tastier loaf; bake for 45 to 55 minutes.

No blender required for this recipe! Cleaning is also easy. If you want, you can combine everything in one bowl.

I could not accurately predict the use of bananas in my family: one week we go through everything, and the next, they remain invisible, red in the dish. This soft crust banana bread is my go-to banana bread staple (if you’re looking for marble, chocolate, chai-spiced, whole wheat or coconut versions, click here). The bread is great right out of the oven and is also delicious toasted for breakfast the next day. My family prefers plain, but feel free to add nuts or chocolate chips if you like.

For really moist banana bread, use overripe bananas. Bananas should be at least dark yellow with lots of brown spots, and it’s okay if the skin turns completely brown.

If you have ripe bananas and you’re not ready to bake them, don’t let them go to waste – freeze them! I freeze them in 2 or 3 bags because when squeezed they usually yield about 1 cup (that’s what banana bread recipes call for). Simply mash the bananas and store in an airtight container or freezer; when ready to use, thaw them in a bag and then mash them.

Lemon juice may seem like an odd ingredient in a banana bread recipe, but it works well without adding lemon flavor to the bread. Like sour cream or butter, add an acid to the batter that reacts with baking to help the bread rise and give it a nice golden color, toasty flavor and light, fluffy texture.

In the bowl of an electric hand mixer (or stand mixer), beat the butter and sugar until light and fluffy, about 2 minutes.
