I like to use olive oil for baking. Unless you’ve been living under a rock, you know that olive oil is one of the healthiest fats and that cooking with olive oil is important in Mediterranean cuisine. But health benefits aside, I’m better than butter in many situations.

It stays much moister when baking with oil than when using butter. And best of all, baked goods with butter tend to dry out faster while staying moist for days.
