There are some tricks to making the most moist banana bread. Using olive oil keeps it as moist as using a lot of bananas – I used 4 that help moisturize the bread. This means there is not much sugar in the recipe, but it is still sweet.

I like to use olive oil for baking. Unless you have ever lived under a rock, you know that olive oil is one of the healthiest fats out there, and cooking with olive oil is a big part of the Mediterranean diet. But aside from the health benefits, I prefer it over butter in many situations.
Using cooking oil retains moisture more than using butter. And most importantly, it stays moist for days, but the berries dry faster.

First, immediate rejection. I’m wrong to claim that some of my recipes are the best. I know this is very topical. But I promise I do not take this word lightly.
This banana bread recipe has been around since 2013! And yes, I have tried other recipes, but I always come back to this one. I do not lie when I say I make this quick bread recipe almost every week and it never takes longer. From 3 days!
Over the years, however, I have discovered that frozen ripe bananas turn good banana bread into an irresistible treat!
Because when ground, bananas will turn soft and smooth. And all water is gold! Do not throw away the liquid, it makes the bread moist and fragrant.
