First time! You will need 3-4 ripe bananas! The kind you don’t want to eat because they don’t look good anymore. You know those with big black spots on their skin. Sometimes I also take old bananas and fry them a little with the skin to make them very soft and release all the sugar. Now grind those bananas well until soft. If you baked them in the oven, make sure they are completely cool before adding the other ingredients. Add the eggs, vanilla, safflower oil and Greek yogurt to the bowl with the mashed bananas.
In a large bowl, combine the flour, baking soda, sugar and salt. Now pour the wet ingredients into the dry ingredients and mix until combined. Pour into a 9 x 5-inch baking pan and bake for one hour. Let cool for 15 minutes before inverting from the pan and cooling on a wire rack.

I recommend using a glass baking pan to make banana bread. I have used irons in the past and almost always the edges of the bread come out dry and have a burnt taste.
The reason for this is that the darker the pan, the hotter it is in the oven. And if it’s too hot, the sides of the banana bread will burn before the inside is cooked.
