To make this easy banana bread, you start by gathering your ingredients. For this recipe we will use:
To make this banana bread, you start by mixing together the wet ingredients, then the dry ingredients, then combine the two. Below is a quick breakdown of exactly how to make the batter:
When the batter is ready, spray a 9×5 pan with non-stick cooking spray and line it with parchment paper. The parchment paper is completely optional, but it will make it much easier to remove the bread from the pan.

Then pour the batter into the prepared pan and place it in the oven for about an hour or until a toothpick inserted in the center comes out clean. I like to let my bread cool in the pan after it’s done for about 20 minutes, then remove it from the pan to cool completely on a wire rack.
The best type of bananas for this recipe are those that are overripe with lots of spots. If your bananas are still green or just yellow, I suggest waiting a little longer.
If you want to speed up the process and ripen your bananas faster, simply put them in a brown paper bag for 1-3 days. The ethylene gas accumulates in the bag and is released around the bananas, speeding up the ripening process.
You can store this banana bread in an airtight container at room temperature for 3-4 days. Although it is not necessary to store banana bread in the refrigerator, it will help it stay fresher a little longer. If you need to store it for a few more days, I suggest storing it in an airtight container in the fridge.
Best Banana Bread Recipe
Yes, absolutely! To freeze the bread: Wrap the bread well in cling film and store it in a freezer bag or container in the fridge for up to 3 months. When you’re ready to enjoy it, let it sit on the counter for a few hours or overnight to come to room temperature.
To freeze individual slices: cut the bread and place it on a baking sheet lined with parchment paper, then place the baking sheet in the refrigerator for two hours or until the slices are frozen. Place the frozen slices in a freezer bag or container and store them in the refrigerator for up to 3 months. Individual slices can be thawed to room temperature or frozen slices can be heated in the microwave for 20-30 seconds at a time or until warmed.
Keep in an airtight container at room temperature for 3-4 days or in the refrigerator for up to 5 days.

Thaw individual slices to room temperature or heat frozen slices in the microwave for 20-30 seconds or until warm.
Butter: If you only have salted butter on hand, reduce the salt in the recipe to 1/4 teaspoon.
Eggs: Eggs at room temperature are best because they spread more evenly in the batter. To quickly bring the eggs to room temperature, place them in a bowl of hot water for 5-10 minutes.
Bananas: The more ripe the banana, the better! You need about 4 large bananas or 5 medium bananas to get 2 cups of bananas. If you’re anything like me, you need some good banana bread recipes. I’ve never been able to accurately predict my family’s banana consumption: one week we’re all going through it, and the next they’re sitting untouched, browning in the bowl. This soft banana bread with a crispy crust is my basic banana bread recipe (if you’re looking for marble, chocolate, chai spice, whole grain or coconut flavored versions, click here). The bread is phenomenal right out of the oven and delicious every time it is eaten for breakfast the next day. My family prefers it plain, but feel free to add nuts or chocolate chips if you like.

For really moist banana bread, use very ripe bananas. The bananas should be at least dark yellow with lots of brown spots, and it’s okay if the skin is completely brown.
If you want to make banana bread and your bananas are not ripe enough, you have several options:
If you have overripe bananas and you’re not ready to bake them, don’t let them go to waste – freeze them! I usually freeze them in bags of 2 or 3 because once broken they usually make about 1 cup (which is what most banana bread recipes call for). All you have to do is peel the bananas and put them in an airtight container or freezer bag; When ready to use, put them in a bag and then crush them.
Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works beautifully without adding a lemon flavor to the bread. Like sour cream or milk, it adds acidity to the batter, which reacts with the baking powder to raise the bread and give it a beautiful golden color, toasty aroma and light, airy texture.

In the bowl of an electric hand mixer (or stand mixer), beat the butter and sugar until light and fluffy, about 2 minutes.
Pour the batter into the prepared pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes.
Banana bread is best served fresh from the oven, but it will keep for several days, wrapped in foil and stored at room temperature. Can also be frozen for up to 3 months. After it cools completely, wrap it tightly in aluminum foil or freezer plastic, or place it in a freezer bag. Thaw overnight on plate before serving.
