There are a few tricks to making the moistest banana bread. Using olive oil helps keep it moist, as does using LOTS of bananas – I used four, which also help sweeten the bread naturally. This means that there is not a lot of sugar in the recipe, but it is still very sweet.

This banana bread recipe also uses white wheat AND whole wheat flour, which helps give the food a boost but still maintains a light and fluffy texture.

I like to use olive oil for baking. Unless you’ve been living under a rock, you know that olive oil is one of the healthiest fats out there, and baking with olive oil is great with Mediterranean cuisine. But health benefits aside, I like it better than butter in many circumstances.

Using cooking oil keeps things much moister than using butter. And best of all, it STAYS moist for days, whereas baked goods with butter tend to dry out faster.

I also love that you don’t have to soften or melt it from the solid state – just pour the olive oil into the bowl and you’re good to go!

And since the banana bread batter is poured into a greased pan, removing the banana bread is easy. Turn the pan upside down

That said, the butter is also delicious. Feel free to use it, or another oil like coconut or canola, in this recipe. And I recommend serving the final product warm, slathered with a generous helping of salted butter. yUM.

Then, when I’m ready to bake, I pop them in the microwave, cut off the tops, and slide the banana off the skin!

Full disclosure: it looks absolutely disgusting when it comes out. It is mild and quite disturbing. BUT, I swear, this trick is a life changer when it comes to baking with bananas!

Best of all – when it’s frozen like this, it becomes very smooth, so you don’t have to worry about mashing the bananas separately. Just put it in the bowl and stir!

I recommend using a glass pan to make banana bread. I’ve used metal before, and almost every time, the edges of the bread come out dry and toasty.

The reason for this is that the darker the pan, the hotter it gets in the oven. And if it’s too hot, it will cook the edges of the banana bread before the inside has a chance to cook through.

Enter: GLASS bakeware. I like it the same way I like using white ceramic bakeware – they won’t get too hot and won’t overcook certain parts of whatever you’re making. I have these and they have served me well!

Cooking time will vary depending on several factors – altitude, how big the bananas are, how big the eggs are, how hot your oven is, etc.

You need to make sure you’re done by inserting a toothpick (or cake tester) into the center of the loaf and removing it. If it comes out clean – the bread is done! If the raw dough sticks to it, more time is needed.

You can store this olive oil banana bread at room temperature for a few days and it will stay super moist and delicious. Make sure you keep it in an airtight container. You can also keep it in the refrigerator for longer, even freeze it for several months.

I usually slice it and then store it, so I can grab a piece in the morning for breakfast without worrying about getting out the cutting board. I like to microwave it though if I have time because warm banana bread is really good.

Banana Bread Recipe With Caramelized Bananas And Hazelnuts Story

It is a constant fixture in our kitchen. We ALWAYS have bananas hanging on a hook on our counter. We buy them every week. Often, when we get them in the store, they are a little green. At the same time, we have leftovers from last week, but they are a little too ripe to eat. Ugghhh! It’s a no-win situation.

Of course, even though I’ll have to wait for those greens to ripen, there’s a lot I can do with the speckled ones. This blog is FULL of delicious recipes using ripe bananas. From fresh and fruity Strawberry Banana Muffins and Blueberry Banana Muffins to classics like Banana Cream Pie and Banana Cake, there’s no shortage of delicious uses for ripe bananas. But one recipe we haven’t posted here, good old fashioned banana bread! Well, that changes today!

The most important aspect of your bananas is to make sure they are ripe enough. As bananas begin to ripen, the starch in them begins to turn to sugar and they will soften. So one way of saying it is that they are softer to the touch. They will also start to get brown spots on their skin. A fully ripe banana for banana bread will be nice and soft and have lots of brown spots. If there is ANY green on the skin, they probably won’t make very good banana bread. On the other hand, make sure they are not too ripe, as then they can get moldy.

As I mentioned above, since this is a 2 banana bread recipe, and we’re only using 2 bananas, they really NEED to be a good size. Besides, the actual brand of banana doesn’t really matter.

Banana bread does not need to be refrigerated. It’s fine at room temperature on your desk. Store in an airtight container to maximize freshness. We recommend one that every kitchen should have! Banana bread should stay fresh in such a container for up to 1 week.

You can easily freeze banana bread. Allow to cool completely. Then wrap in freezer wrap or a freezer bag. It will be good in your fridge for about 5 months. You can freeze whole bread and then thaw it when needed. Or you can slice the bread and freeze them separately, or at least separate them with parchment paper. So you only need what you need!
