Make Banana Bread With Frozen Bananas – Don’t forget those overripe bananas just yet – you can freeze them and make delicious baked goods without compromising the finished product. In fact, if you use the frozen fruit, making banana bread can be easier than ever.
A bunch of bananas can take up to five days to fully ripen on the counter. Once ripe, you can move them to the fridge for another five to seven days before they start to get a little too ripe for comfort. If this happens, you can freeze them in several ways for up to three months. It’s best to remove the skin first, as peeling an already frozen banana can be difficult and a little rough – the skins turn black, and when the bananas thaw, they become quite scaly. Instead, it’s easier to peel the bananas you want to keep and store them whole in a labeled freezer-safe bag. If you plan to make more smoothies than baked goods, it is possible to slice the bananas before freezing for easy measuring. Be sure to freeze them in a single layer on a baking sheet before moving them to a container for storage. That way the individual slices won’t stick together.

I love a good banana bread. But it’s easy to try to bake one and leave it dry and runny. Not with this recipe! This super moist banana bread recipe is not only GOOD, but it’s healthy too!
The Best Banana Bread ~sweet & Savory
There are a few tricks to making the ultimate moist banana bread. Using olive oil helps keep it moist, as does using lots of bananas – I used four, which also help naturally sweeten the bread. This means there isn’t a lot of sugar in the recipe, but it’s still decadently sweet.
This banana bread recipe also uses both white and whole wheat flour, which helps increase the nutrition, but still maintains a light and fluffy texture.
I like to use olive oil for baking. Unless you’ve been living under a rock, you know that olive oil is one of the healthiest fats, and baking with olive oil is big with Mediterranean food. But aside from health benefits, I just find it better than butter in many circumstances.
Using oil for baking keeps things much moister than using butter. And best of all, it STAYS moist days later, whereas baked goods with butter tend to dry out faster.
Vegan Banana Bread (easy + Healthy)
I also love that you don’t have to soften or melt it from the solid state – just the olive oil in the bowl and you’re good!
And since the banana bread is poured into a greased loaf pan, it makes removing the banana bread easy. Just flip the pan over
That said, butter is also delicious. Feel free to use it, or another oil like coconut or canola, in this recipe. And I recommend serving the final product warm, slathered with a generous helping of salted butter. JUM.

Full disclosure: it looks absolutely hideous when it comes out. It’s sweet and quite disturbing. BUT, I swear, this trick is a life changer when it comes to baking with bananas!
Best of all – when it’s frozen like this, it gets very musky, so you don’t have to worry about cleaning it apart from the banana. Just pour it into the bowl and stir away!
I recommend using a glass pan to make banana bread. I’ve used metal before, and almost every time the edges of the bread come out dry and burnt.
The reason for this is that the darker the pan, the hotter it gets in the oven. And if it’s too hot, it will overcook the edges of the banana bread before the inside has a chance to fully cook.
Easy Vegan Banana Bread (one Bowl Recipe!)
Enter: GLASS baking dish. I love it as much as I love using white ceramic baking dishes – they don’t get too hot and overcook certain parts of whatever you’re making. I have these and they have served me well!
The cooking time varies depending on a number of factors – altitude, how big the bananas are, how big the eggs are, how hot your oven is, etc.
You must be sure to check doneness by inserting a toothpick (or cake tester) into the center of the bread and removing it. If it comes out clean – the bread is ready! If raw dough sticks to it, it needs more time.
You can keep this banana bread with olive oil at room temperature for a few days and it will stay super moist and delicious. Make sure you store it in an airtight container. You can also put it in the fridge for longer, and even freeze it for a few months.
