King Arthur Flour Muffin Mix – In addition to introducing the gluten-free flour mix, King Arthur Flour has also introduced an additional line of gluten-free mixes, including the muffin mix I’m reviewing today.
This mix is a vanilla based one, but it’s meant to be made your favorite way. Anyone make blueberry muffins? Or maybe you prefer it as an apple cinnamon cake. I decided to make mine a chocolate muffin with banana.
King Arthur Flour Muffin Mix
The recipe calls for butter, eggs and milk. As always, I replace them with allergen-free alternatives. Specifically, in addition to the base mix, I added:
Gluten Free Blueberry Muffins
The first thing I noticed was that it’s a dough-like mix, meaning you need structure to hold the dough together. I filled a standard 12 muffin tin but they overflowed a bit. Maybe it had something to do with my changes and additions. I could have made about 15 cakes with this mix. It also works well in a loaf pan. Also note that I should leave it in the oven for about 25 minutes (rather than the recommended 18-22 minutes).
Ingredients include rice flour, potato starch, and tapioca starch, as well as both guar gum and xantham gum. If you have a corn allergy (due to cornstarch and xantham gum) this blend is not for you.
I found these cupcakes on the sweet side (not surprising since the first ingredient is sugar). In that sense, I found them to be more of a brioche than a breakfast muffin – it’s a personal preference. However, I will point out that the ingredient list is very similar to King Arthur’s Gluten Free Cake Mix (which I will review in my next post).
So how did they come out? Pretty beautiful! This mix works great with allergen-free substitutes, and the muffins taste great!
