King Arthur English Muffin Toasting Bread

King Arthur English Muffin Toasting Bread – You know how you always remember the first time you experienced something? The first time behind the wheel of a car, the first jump from skis, that first sweet kiss…

This bread was my first experience with yeast. And it opened up a world of exciting possibilities, many of which I have explored over the past 30 years. From sourdough bread to baguettes to rye sandwiches, I’ve traveled a lot in the yeast company.

Maybe it’s the comfort food factor: this bread makes the best toast. Its crispy holes capture the melting butter, while the texture offers a soft interior baked piece and a crisp, crunchy exterior. Add cinnamon-sugar or jam and enjoy the toast.

Or maybe it’s the ease of preparation. No swirling. No formation. Just mix, pour into a pan, bring to a boil and bake. Ninety minutes after the tempting thought of toast popped into your head, you can pull fresh, hot bread out of the oven.

Now that the holidays are (mostly) over, it’s time to slow down and relax. Give yourself an hour to curl up in a comfortable chair with a good book. and a cup of tea. And – of course – a slice or two of freshly made toast.

First, heat the milk, water, and vegetable oil to 120°F to 130°F. It will be very hot on your skin. As a point of comparison, the hottest tap water will be around 120°F (unless you have ridiculously, dangerously hot tap water).

Mix flour, yeast, sugar, salt and soda. Pour the hot liquid over the top and mix with the flat beater of a stand mixer.

Blend until completely combined, then blend on high speed for 1 minute. The dough won’t be runny enough to pour, but it won’t be firm enough to knead either.

Grease an 8 1/2″ x 4 1/2″ loaf pan and sprinkle with cornmeal. This makes the crust very slightly crispy, perfect for toast or sandwiches.

Alternatively, opt for a 9″ x 4″ loaf pan (Pullman) pan (also known as a gluten-free loaf pan) like I did here. To be honest, I’ve completely switched from an 8 1/2″ x 4 1/2″ or 9″ x 5″ loaf pan to my 9″ x 4″ multipurpose pan.

Pour the soft dough into the pan, roll it out as much as possible. Cover the bread and let it rest for about an hour.

It should come down to the edge of the pan—if you’re using an 8 1/2″ x 4 1/2″ loaf pan. If using a 9″ x 4″ pan, the batter will be about 1″ below the edge of the pan.

If you use a 9″ x 5″ loaf pan that has 15% more capacity, the dough probably won’t go over the edge. Even the bread will not be in such a beautiful shape.

Bake the bread in a preheated 400°F oven for about 22 minutes. Really, just 22 minutes. The interior of the loaf reads 190°F on a digital thermometer. If not, cook until browned but do not boil; This bread is designed to be moist on the inside.

Let the bread cool completely before cutting. Slicing into hot bread can give the whole thing a chewy texture. Patience is a virtue!

English Muffin Toast Bread is one of the most popular King Arthur bread recipes. It’s simple, light and quick: the perfect bread for a beginner baker or a quick baker.

But because the bread goes from bowl to oven to table in just 90 minutes, it has very little time to develop the deep, rich flavor that many long-leavened yeast breads offer. Sure, it tastes like yeast, but other than that, it’s pretty simple.

Enter the throwaway maker: You know, that part of the sourdough starter that you unfortunately throw away during your weekly (well, hopefully weekly) mealtimes.

A discarded starter is just flour, water, wild yeast, and lots of sourdough, and it deserves a better fate than just tossing it in the trash or compost. How about we throw a few crumbs into an English muffin toast and see if we can deepen the flavor of the bread?

Fermentation is a traditional method for developing the flavor profile of yeast bread: the longer the fermentation, the richer the flavor of the bread. So how do we deepen the flavor of this bread without extending the fermentation time? You will achieve the right balance of starter, yeast and time.

Here’s what you’ll do to achieve a richer flavor, full growth, and keep the recipe short:

The slightly rough crust is what makes this bread so nice to toast: those little holes and crevices hold lots of melted butter!

What Can You Use English Muffin Toasting Bread For?

* The original recipe contains baking soda, which can neutralize the pleasant sour taste of the appetite; Substituting baking powder will help preserve the taste of the appetizer. In addition, since the baking powder is first activated when the liquid is activated and then again when it encounters the heat of the oven, its presence punctures the spring of the bread oven.

Combine the flour, sugar, salt, baking powder and instant yeast in a large bowl or the bowl of a stand mixer.

Combine the milk and oil in a separate microwave-safe bowl (or pot on the stove) and heat to 120°F to 130°F. Be sure to mix the liquid well before measuring the temperature; You want an accurate reading. If you don’t have a thermometer, the liquid will get uncomfortably hot if you stick your finger in it quickly. Make sure it doesn’t reach 140°F, as temperatures in that range can damage the yeast.

Pour the hot liquid over the dry ingredients in a mixing bowl and mix until combined. Stir in the undo maker.

Using an electric mixer or a stand mixer fitted with the paddle attachment, mix on high speed for 1 minute; The dough will be smooth and very soft – almost a thick dough, not a dough.

If you don’t have an electric mixer, mix by hand for 2-3 minutes, or until the dough is smooth and elastic.

Lightly grease a standard loaf pan (8 1/2″ x 4 1/2″ x 2 3/4″) and dust the bottom and sides with cornmeal.

To be honest, I left my standard loaf pan for a taller 9″ x 4″ x 4″ pan; I like the side support it offers for rising and baking bread, as well as flat-sided (not mushroom-covered) bread. But your standard pan will work just fine. And if you only have a quick bread pan (9″ x 5″), use it: your bread will just be wider and shorter.

Pour the soft dough into the pan, flatten the surface as much as possible. Sprinkle cornmeal on top, if desired, for extra crunch in the crust.

Cover the bowl and let the dough rest for about an hour. For a standard loaf pan, you want it to barely go over the edge of the pan. When you look at the edge from eye level, you should be able to see the dough, but it shouldn’t be more than, say, 1/4″ from the edge.

If you’re using a 9″ x 4″ x 4″ pan, you’ll want the dough to double in size. Sure, you can double; but for all of you who are more comfortable with precision, try this:

Carefully insert a toothpick between the dough and the bowl, note where the dough reaches the probe, then remove the probe and measure how high the dough rises before it rises. Double that number, mark it at the peak, and change the peak.

Sourdough English Muffins Recipe

When the dough touches the toothpick mark, it will double in size. (And no, the risen dough didn’t completely take the toothpick! The pick only increased by 1/16.”) While the dough is rising, preheat the oven to 400°F.

Bake the risen loaf for 22 to 27 minutes, until golden brown and an internal temperature of 190°F.
