In case you missed it, I’ve spent the last few weeks sharing small batch recipes that are more appropriate for our current weather on my Instagram account. One of the first recipes I shared was for these small batch blueberry muffins. They are a hit! Even though it’s been a few weeks since I posted the original recipe, many of you are still making it through my Instagram Story tutorial. Every day, I still get tons of people sharing their version of blueberry muffins, as well as DMs and tons of questions about the recipe itself. I decided to collect everything (including the recipe for small batch blueberry muffins!) in this blog post for easy reference.
King Arthur Blueberry Muffin Recipe
First of all, this small batch blueberry muffin recipe is a scaled down version of one of the most popular recipes on my blog to date, a copycat of Levain Bakery’s blueberry muffin recipe. The original recipe makes 9 muffins, but I adapted this recipe to make a small batch of four.

But why is this recipe so popular in the first place? I think it has something to do with the appearance of the cookies. Each blueberry muffin comes with an extra tall, domed, crispy muffin top. These unique muffin tops are the result of a generous sprinkling of sugar on each muffin. You can read more about how to reverse engineer the recipe from the famous Levain pastry in my original blog post.
However, muffins have a delicious taste in addition to their appearance. The muffin tops are super crispy and spread from all that extra sugar. I didn’t skimp on the blueberries in the recipe either – each blueberry muffin is packed with lots of fruit.

Yes, but with reservations. You can substitute up to ¼ cup of all-purpose flour with your preferred flour substitute. This flour alternative can also be gluten-free. For example, the original whole batch recipe on my blog actually uses a small amount of almond flour (also known as almond meal) for flavor! If you go this route, you may need to adjust the cooking time. A gluten-free substitute will usually require less cooking time, while a wholemeal substitute will require a few minutes more.
Blueberry Muffins, What Could Go Wrong?
That said, you can’t completely replace all-purpose flour with another type of flour without changing the results significantly. This is especially true if you completely replace all-purpose flour with a gluten-free alternative such as almond flour or almond flour. Your muffins will probably be pretty flat and won’t look or taste like my muffins.
Would 1-1 gluten-free all-purpose flour (like Bob’s Red Mill or King Arthur Flour) work in this recipe?
I’m sorry, but I don’t know. I rarely bake with these types of flour substitutes because they are expensive and my family does not have gluten restrictions. Yes! You can use substitutes such as almond milk, coconut milk, soy milk and/or oat milk in this recipe without changing the results. Note, however, that using milk substitutes with “stronger” flavors (such as coconut milk or oat milk) will also transfer their flavor to the blueberry muffins. In particular, your blueberry muffins can also have a subtle flavor of coconut or oat milk.
Gluten Free Blueberry Muffin Recipe
Yes, but with reservations. According to the baker’s tips below in the yellow box, the secret to super tall, domed muffins starts with your ingredients. If either is cooler than room temperature, your cookies won’t rise and dome as well as muffins. Additionally, using frozen blueberries straight from the freezer will make these cookies stick to the pan.
As mentioned, you can use frozen blueberries in this recipe. However, you should prepare them by thawing them and making sure they are completely at room temperature before using them in this recipe. When blueberries thaw, they release liquid. Drain off most of the liquid before using it in the recipe.
Yes, but with reservations. The recipe is even better if you replace the blueberries with another berry. Think: blackberries, blueberries, and raspberries. You can also get away with cutting the strawberries into roughly the size of the blueberries and using them in this recipe.
However, crushed core and stemmed fruit do not work well. Why? The fruit is very heavy. Muffins do not rise well with chopped apples, pears, etc.
Easy Blueberry Muffins
No, please don’t, bananas, unlike berries, turn pure when cooked. As a result, this recipe will not work with bananas. If you want to make banana muffins, please check out the Banana Cinnamon Muffins recipe. This recipe uses the techniques of Levain Bakery’s blueberry muffin recipe and also makes taller, domed, wide muffin tops dusted with cinnamon sugar. I even saved a video tutorial for that recipe on my Instagram profile.
Technically yes, but I don’t recommend doing it. You can replace the blueberries in the recipe with the same amount of chocolate chips to make chocolate chip muffins. However, I don’t really recommend it.
Why? In order for the muffins to show off their long, wide muffin tops, you need to sprinkle sugar on each one. All that sugar with the sweetness of the chocolate will be too much. Trust me – I love chocolate and sugar (I am a professional baking blogger after all!). My sweet tooth limit is higher than others. But even I thought chocolate chips were high in sugar.
To combat this, you can definitely avoid sprinkling sugar on any muffins. But then your muffins don’t spread and crisp at all, and that completely defeats the point of this recipe. You will end up with a completely different muffin and a different flavor than mine. So it depends on you. But personally, I think it’s better to find a chocolate chip muffin recipe instead of messing with it.
Low Fodmap & Gf Blueberry Muffins
Instead of using paper muffin liners, I follow the Levain Bakery muffin technique and spray the muffin pan cavities with cooking spray instead. If you want to use paper liners, please see the troubleshooting section below.
These muffins work best with a neutral oil cooking spray like canola or vegetable oil. I don’t know why, but muffins with coconut oil and avocado oil sprays tend to stick to the pan. Trust me – I’ve tried both!
I also recommend using a flour-based spray like Baker’s Joy or Pam. These are neutral oil sprays with flour to make it easier to release baked goods from pans.
No, please don’t. While I’m usually not opposed to buttering your pans, it didn’t work well in this small-batch blueberry muffin recipe. Muffins tend to stick to the pan.
