For me it brings back all the happy memories. The beauty of banana ice cream is that it is naturally low in fat. The thick layer of mashed banana makes the ice cream creamy without adding eggs or heavy cream. All the more reason to try it!
Banana Cream Pie Ice Cream
To make the best banana cream, it is important to use very ripe bananas. To make bananas ripen faster, store them in a sealed brown paper bag.
You will need whole milk for the recipe. If you don’t want to buy a whole carton of milk, you can use 1 cup skim or low fat milk and 1/2 cup heavy cream.
Cut the bananas into 1/2-inch pieces and combine them with the brown sugar and butter in a 2-quart baking dish.
Immediately place the caramelized bananas in a blender or food processor (if you wait too long, the caramel will start to harden).
Vegan Ice Cream Made With Bananas
Freeze the mixture in the refrigerator, then freeze in an ice cream maker according to the manufacturer’s instructions. (This is the ice cream machine I have.)
As with most homemade ice creams, the mixture will not completely freeze in the machine. It is best to place the creamy ice cream in a container and freeze for a few hours until it is hard enough to scoop.

Bananas can be frozen for weeks and they will not spoil. Before freezing, peel and cut the bananas into small pieces that you will discard when you are ready to make the banana ice cream. Just make sure you place the banana in an airtight bag or container.
As you can see in the pictures, I put a bit of ground cinnamon on my banana ice cream, but that just gives some contrast in the pictures. And, in fact, because I like cinnamon. Cinnamon is completely optional, though, and isn’t even listed as an ingredient in the recipe.
