How To Make Banana Bread With Only 2 Bananas – My banana bread recipe since 2013 and it’s the best!! This recipe makes two of the most moist and delicious breads with simple ingredients and just a wooden spoon! The only banana bread recipe you will ever need!!
First, a quick disclaimer. I am guilty of claiming that some of my recipes are the best. I understand that this is quite subjective. But I promise you, I don’t take that term lightly.
How To Make Banana Bread With Only 2 Bananas
This banana bread recipe has been my go-to recipe since 2013! And yes, I’ve tried other recipes too, but I always come back to this one. I won’t lie if I say that I make this quick bread recipe almost every week and it never lasts more than 3 days!
Oatmeal Banana Bread
But over the years, I’ve found that overripe frozen bananas make great banana bread, the kind I can’t stop eating!
Because when thawed, bananas become super runny and runny. And all these juices are gold! Do not discard the liquid, it makes the bread moist and delicious.
When you get nice, ripe bananas with lots of dark spots, put them in the freezer. (And yes, black bananas are perfectly fine to use!)
Use a very large bowl to make the batter. I use a 4qt bowl (the largest bowl in this set).
Easy Classic Banana Bread
To test the skill, insert a long wooden skewer or toothpick. If it comes out clean, the bread is ready!
And if you prefer to make a half batch (just one loaf, or 12 muffins), follow the recipe for banana muffins instead. It’s the same recipe, but for half a batch.
But I always put them in the fridge. Mainly to keep them out of sight or they will disappear within hours.
To keep the banana bread moist, be sure to cover it with plastic wrap or place it in an airtight container.
The Best Bananas For Banana Bread
To serve, I heat a slice in the microwave for about 30 seconds, and it tastes like fresh out of the oven!

I’ve never been able to accurately predict my family’s banana consumption: one week we go through them all, and the next they sit untouched and browning in the bowl. This soft banana bread with a crispy crust is my basic banana bread recipe (if you’re looking for marble, chocolate, chai spiced, whole wheat or coconut flavored versions, click here). The bread is phenomenal straight from the oven and delicious every time it is toasted for breakfast the next day. My family prefers it plain, but feel free to add nuts or chocolate chips if you like.
For really moist banana bread, use very ripe bananas. The bananas should be at least dark yellow with lots of brown spots, and it’s fine if the skin is completely brown.
Easy Banana Bread With Chocolate, Spices, Black Sesame And Tahini
If you want to make banana bread and your bananas are not ripe enough, you have several options:
If you have overripe bananas and you’re not ready to bake them, don’t let them go to waste – freeze them! I tend to freeze them in bags of 2 or 3 because when mashed they usually make about 1 cup (which is what most banana bread recipes call for). All you have to do is peel the bananas and put them in an airtight container or freezer bag; When ready to use, thaw them in a bag and then crush them.
Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works beautifully without adding a lemon flavor to the bread. Like sour cream or milk, it adds acidity to the batter that reacts with the baking soda to help the bread rise and give it a beautiful golden color, toasty flavor and light, airy texture.
In the bowl of an electric hand mixer (or stand mixer), beat the butter and sugar until light and fluffy, approx. 2 minutes.

Pour the batter into the prepared pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes.
Banana bread is best served fresh from the oven, but it will keep for a few days, wrapped in foil and stored at room temperature. Can also be frozen for up to 3 months. After it has completely cooled, wrap it tightly in aluminum foil or freezer plastic, or place it in a freezer bag. Thaw overnight on the counter before serving.

Since the tin is slightly larger, the baking time is shorter: 47 to 57 minutes. A 9 x 5-inch pan will make extra short but still tasty bread; Bake for 45 to 55 minutes.
