Or maybe I should say, sometimes you have a ripe banana and you want to do something with it (ideally, make bread). But is that lone banana all alone?

Second, sometimes you just want to cook something. Is it just me, or does everyone feel this way from time to time (especially in the winter months)? Ideally, I want to cook something easy that will make my whole kitchen smell amazing.

But I’d rather the end result wasn’t a dozen cookies or scones or whatever, because I know myself well enough to know that means I’ll probably eat a dozen cookies or scones in the next few days.

I want a little treat, sure, but mostly I just want to cook something and have a bite to eat at the end.

Third, and more literally, this recipe was inspired by Chrissy Teigen’s recipe from her cookbook (which I love). But I’ll be the first to admit that this is a much simpler version that ultimately results in smaller portions.

It’s really very different, but I’ve always been inspired by her recipe and I love her cookbook so much that I wanted to share it anyway. 🙂

If you only have one banana, make this banana bread. If you love banana bread (raise your hand), but you don’t need a big cake in the house because of your lack of self-control, make this banana bread.

I added a second banana on top of these mini loaves just for pictures (just trying to give them something nice to look at). This is not necessary and, in fact, I found that it caused the batter under the banana to cook unevenly. So I don’t really recommend it, but if you want the look…I do. 🙂

He loved bananas – but every now and then – he didn’t eat them in time to end up with sad overripe bananas – so banana bread was made.

Since my ex-husband is allergic to eggs, when I started making banana bread – I had to make banana bread without eggs. And luckily – it’s really easy to replace the eggs in a regular recipe and still get moist and delicious eggless banana bread!

First – mash your old bananas. If you have bananas that aren’t too ripe – you can microwave them for 30 seconds and that basically thins them out so they’re just right!

So sugar and butter cream is not difficult to make. Always try to use softened butter for this – then beat for a few minutes.

Allow bananas to ripen (and overripe) at room temperature. Depending on the weather, this can take a few days or up to a week.

The best bananas for banana bread aren’t yellow; they are black or at least streaked with black/brown, with only the faintest hint of green on the trunk. And again, the darker the better: there’s no such thing as an overripe banana when making banana bread.

Obviously, this is a pain if you don’t plan your baking projects ahead of time and want to make banana bread right away. If you’re a fast baker, it pays to keep a supply of ripe bananas on hand at all times – in your freezer.

Frozen bananas turn dark brown or black; which is perfectly fine. When you’re ready to cook, take the bananas you need and let them thaw at room temperature. Or thaw in the microwave (skin and all); my microwave takes about 3 minutes to defrost four medium bananas.

Thawed bananas are very sweet and watery; again, no worries. Simply cut the peel lengthwise and squeeze the soft, dark bananas into your mixing bowl (if baking by weight) or measuring cup. They will be very soft and easily crushed. Include any liquid.

You can also simply cut off the top and squeeze the soft banana into your bowl or cup like squeezing a tube of toothpaste.

Warning: You may have seen advice online to roast unripe bananas in their skins for 30 minutes in a 350°F oven. This should concentrate their flavor and make them sweet. I tried; They were really pitch black, but they tasted like green bananas, only mushy. Don’t go there.

How To: Freeze & Use Ripe Bananas

Finally, what if you have to make banana bread right now – your best friend dropped by and you promised… but you don’t have any overripe bananas on hand?

Use all the bananas you can get. Increase the sugar in the recipe by about 15% (usually 2 to 3 tablespoons) to reduce the missing sweetness; and increase the salt by about 25% to help the flavor intensity.

Now this does not apply to the completely green bananas that you sometimes see in the supermarket. So if that’s all you can find, just make some pumpkin bread and wait!
