What makes these muffins so good? For starters, they’re huge—we’re talking jumbo, bakery-style chocolate chip muffins! They are also completely soft and fluffy (unlike the crunchy biscuit I just shared) and of course filled with chocolate chips. As a final touch, they are dusted with coarse sugar so that the tops are not only slightly crunchy, but
. These cupcakes really belong at the New York Bakery Showcase, but luckily, you don’t have to plan a trip to NYC to try them.
Like my basic muffin recipe, this recipe uses The Kitchen Whisperer’s technique for beautiful, long muffin tops. I also use this technique on my banana muffins and many of you have commented to let me know how well it works for you.
In addition to technique, these cakes use carefully selected ingredients to claim to be the BEST. Here are some of the game changers we’ll be using today:
Double Chocolate Chip Muffins
SAMI’S TIP: Don’t have jumbo muffin tins? Baking paper can be used to make muffin tins! Not only will this save you a trip to the store, but it will also give you an oven-like look.
Resting the dough is optional, but this way we get fluffier chocolate chip muffins and taller muffin tops. If you’ve made my buttermilk pancakes, you know that for the same reason I like to rest the batter on preheated pan, it thickens and the result is softer!
Now comes a special technique for chocolate cakes that rise more than others! You run your oven at a high temperature and then lower the temperature by about a third without opening the oven door! This little trick will liven up your muffin tops without burning (or drying out) the muffin bottoms. Pretty cool, right?
SAM’S TIP: (carefully) Remove the chocolate muffins from the pan 5-10 minutes after removing from the oven. If you leave them in a hot pan, the bottoms can get soggy.

Here we use the variable temperature technique which plays a big role in the rising of the cakes. But another important step is resting the dough. The longer it rests, the thicker it will be, and thicker dough means longer cakes! I recommend letting the dough rest for at least 15 minutes, but if you let it rest for about an hour, you will be rewarded with nice long muffin tops!
Your chocolate muffins will stay fresh when stored in an airtight container at room temperature. You can also freeze them!
If you try them, I’d love it if you let me know how it compares to the 64 million other chocolate cake recipes (and counting)!
Let’s cook together! I walk you through all the steps in the recipe I wrote and in the video below! If you try this recipe, don’t forget to tag me on Instagram and you can also find me on YouTube and Facebook.

After making 5 batches of muffins, I nailed these 60 muffin GUYS, the most perfect wet chocolate cake with beautiful domed tops.
Bakery-style muffins are known for their domed tops. Besides, who doesn’t love them? I used several techniques to “raise” these cakes so that they had dome-shaped tops.
Oatmeal Chocolate Chip Muffins
After mixing and before pouring into the muffin tin, let the dough rest for 15 minutes. During the resting period, the starch molecules in the flour absorb the liquid in the dough, causing them to rise, giving the dough a denser consistency (similar to a kitchen whisk). Our 15 minute break is just a short break.
Bake muffins on high (425ºF) for 7 minutes, then reduce temperature to 350ºF. If you start making muffins at a higher temperature, the dough will rise quickly and form a dome shape.
Fill the muffin tins with the batter up to the top. Yes, it goes against everything you’ve heard, but it’s important that the bun helps you achieve that height.
I have made these cakes with both regular and gluten free flours and have had AWESOME results many times. For the King Arthur flour measure, I recommend the gluten-free measure. Use it as a cereal instead of regular flour.
Blueberry Chocolate Chip Muffins
Wait for the muffins to cool completely first. I like to wrap two buns in plastic wrap (with the bottom of the buns touching) and then place all the wrapped bundles in a zip lock bag.
Let them come to room temperature on the counter to thaw, or pop them in the microwave in 15-second intervals as many times as you like.
Sticking the measuring cup directly into the flour bag can put too much flour in the cup, resulting in dry, dense cakes. Beth’s tips
