Since it’s easy to snack on a busy morning, I like to make new dishes that are low in calories but still delicious so I can avoid the bakery on my way to work!
I actually put all the ingredients in a bowl and mixed by hand with a wooden spoon. Just mix until all the ingredients are incorporated and there are no lumps of dough anywhere.

The Ultimate Healthy Chocolate Mini Muffins
Know. When I bake muffins, I emphasize all the refined sugar, flour, and oil needed to make them beautiful. So I fill them with oats and dried fruit and whole grains and then yes, they are heavy and beige. But when I saw these beauties at my local bagel shop this morning, I decided: This is it.
Sometimes all you need is a chocolate muffin that barely pretends it’s not just a cake. Sure, it has yogurt in it. Sure, the sweetness is under control. But I decided I needed a chocolate muffin recipe in my repertoire, because I’m tempted to buy one for the days when only a dark chocolate muffin would do. It was a great idea; Not one person in my family was brainwashed as I tested and retested them to make them perfect for us. They conform to all my baking rules: they contain one bowl, don’t use strict ingredients, and even pass the overnight test left out on the counter. The muffins are still shockingly velvety (even if, of course, a little drier). Finally, you can easily reduce your commitment level: in half, it makes six muffins. I hope they start your week off perfectly.
There is also great material flexibility here. You can bake in any oil or butter you like. You can use non-dairy milk, or even coffee or water, for the milk. Thicker Greek yogurt or “plain” yogurt can be used, although I prefer the latter here. You can use white or raw sugar instead, but if you choose one, I like brown sugar best with chocolate cake. Any type of cocoa powder will work; I tested it with both Hershey’s Dark and Valrhona (Dutch Cocoa) and both were dreamy. However, chocolate chips are not optional.
Heat the oven to 350 degrees Celsius. Coat a standard 12-cup pan with butter or non-stick spray, or line with parchment paper. In a large bowl, beat together the butter, sugar, milk, yogurt and vanilla. Beat in eggs. Sprinkle salt and baking soda on the batter and beat to combine. Mix in cocoa powder while mixing until no lumps disappear. Add refined flour and 1 cup of chocolate chips and mix.
Calorie Conscious Chocolate Muffins Recipe
Pour batter into 12 muffin cups; Don’t worry if it goes all the way to the top. Sprinkle the remaining 1/3 cup of chips on the muffins. Bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the center of each muffin comes out clean.
Eat immediately or store muffins in an airtight container at room temperature for several days. The muffins dry out a little more each day they rest, but will reheat well.
