This banana bread recipe has been my favorite since 2013! And yes, I have tried other recipes, but I always come back to this one. I wouldn’t be lying if I said I make this quick bread recipe almost every week and no more than 3 days!

However, over the years I have discovered that frozen ripe bananas make such good banana bread that I can’t stop eating them!

Because when thawed, bananas become supermushy and liquid-y. And all the juice is gold! Don’t waste the liquid, it makes the bread moist and delicious.

When you get a nice, ripe banana with lots of dark spots, put it in the freezer. (And yes, black bananas are fine to use!)

The One Surprising Ingredient You Should Be Adding To Your Banana Bread But Aren’t

Use a very large bowl to make the batter. I used a 4qt bowl (the largest bowl in this set).

To check for doneness, insert a long wooden skewer or toothpick. If it comes out clean, it becomes bread!

And if you choose to make a half batch (just 1 loaf or 12 muffins), follow the banana muffin recipe. Same recipe, but for a half batch.

However, I always keep it in the fridge. It is common to keep it out of sight, or it will disappear within a few hours.

Food Lovin’ Family

To keep banana bread moist, cover it with plastic wrap or place it in an airtight container.

To serve, I microwave the slices for 30 seconds or so, and they taste like fresh out of the oven!

Easy One Bowl Banana Bread With Frozen Bananas And Brown Butter

A bunch of bananas can take up to five days to ripen on the table. After ripening, you can move it to the refrigerator for an additional five to seven days before it ripens a bit more to rest. If this happens, you can freeze it for up to three months in several ways. It is better to remove the skin in advance, because peeling a frozen banana can be difficult and a little messy – the skin turns black, and when the banana melts, it becomes slippery. But it’s easier to peel the bananas you want to keep and store them whole in a freezer-safe bag. If you want to make more of a smoothie than toast, you can slice bananas before freezing for easy measuring. Make sure you freeze in a single layer on the baking sheet before transferring to a container for storage. This way, the individual slices will not stick together.

What do you do with frozen bananas? There are many recipes for banana bread that can be used just like frozen bananas. There are also many vegan recipes that rely on bananas instead of eggs, and frozen fruit can also be used. In fact, thawing frozen bananas can make a very squishy substance that’s easy to incorporate with dry ingredients. But it’s better to read the recipe beforehand and make sure it doesn’t call for fresh bananas. But the good news: most won’t! And if you find the perfect recipe—like this one—melt a banana in a bowl at room temperature and it’s ready in no time.

If you can’t find overripe bananas, you’ll have to make your own. Buy some bananas – most supermarkets usually have yellow-green ones or greenish-yellow ones at the end of the stem.

These bananas may be a little ripe for grain, but they’re just starting to turn into banana bread.
