Healthy Zucchini Cake With Applesauce
It’s peak zucchini season, and we’re high on big zucchini, of course. I originally posted this incredible bread last summer as a way to transition from summer to fall and had to share it again because it’s so perfect for this time of year.

I knew I wanted to change up my famously healthy zucchini bread, and as September approaches, it’s time for us to rejoice that everything is down. Okay, we’ve got whole fresh zucchini in this gorgeous loaf, plus sweet apple chunks and tons of warm spices like cinnamon and nutmeg. Don’t forget the crunchy chopped pecans and of course the creamy cinnamon cream cheese frosting!

You all know I love my zucchini recipes. I grow zucchini every summer, and coming up with new recipes to use them is one of my favorite summer activities. Over the years, I have shared many wonderful zucchini cake recipes, all of which have become my personal favorites.
Healthy Zucchini Bread With Applesauce
Today I think I outdid myself. I took inspiration from my Nana’s Carrot Cake and ended up with an incredibly delicious and moist Cojut Cake with so many spices that you’ll be blown away in your mouth. No oil. No oil. Applesauce does it all, and trust me, you won’t miss a drop of butter.
As you well know, I need a special occasion to bake a layer cake, and last week wasn’t one of them lol! I went with an appetizer pie made in a 9″ baking dish, which served our sweet tooth perfectly and allowed me to use up some of that zucchini.
I added toasted walnuts and coconut to the mix because I love them and they go so well with the zucchini. If you’re not a fan of either (or both!), you can choose not to use them, no problem.
I used Almond Breeze Unsweetened Vanilla to get the perfect texture in this Squash Gingerbread. Using almond milk instead of water in this cake recipe adds a really delicious flavor, and I keep a few smoothie boxes on hand so this is an easy option. I used unsweetened vanilla because I was planning on frosting the cake, but if you don’t, regular vanilla is also a good option. Of course, an almond milk/coconut milk mix would be perfect here too! Almond Breeze Almondmilk is available both chilled and frozen so you can keep it in your pantry.
Easy Zucchini Cake
One thing I didn’t mention is the crazy delicious smell that comes out of your oven while this cake is baking. you guys. It was so hard to wait for this little one to cool…if I hadn’t already put in cream cheese and softened butter, I would have waited 30 minutes and dusted the cake with powdered sugar – yum!
That being said, I opted for a quick cream cheese frosting to give the zucchini cake some sweetness. The frosting is pretty simple: cream cheese, butter, powdered sugar and just enough almond breeze unsweetened vanilla to get the perfect consistency. Start with a few tablespoons and add more as needed.

Zucchini Cake With Cream Cheese Applesauce Icing Recipe
This is probably one of the most popular zucchini recipes I’ve ever shared, and for good reason. This zucchini pie is incredibly easy to make and full of awesomeness – namely bacon and zucchini. Come get some!
This is what I bake when I want to feel good as a parent. Zucchini, carrots and apples are added to this quick bread, which can be used as a dessert in a pint. Polish as desired.
People doubt this recipe…until it’s cooked. Lemon and zucchini are a wonderful combination, and this zucchini pie recipe proves it. One slice is never enough for this lemon lover. This chocolate tukin cake is so moist and decadent! It’s topped with my mom’s famous fondant icing. This cake is the perfect way to use zucchini!
I really love zucchini! It’s so versatile that it can be used in place of pasta, fried as an easy side dish, grilled with chicken or pork chops, and even made into bread with my Chocolate Zucchini Bread!
Applesauce Cake Recipe
It’s hard to go wrong with a cake, this one gets a lot of moisture from the zucchini, plus it’s topped with my mom’s famous fondant icing.
We love this frosting because it comes together in about 2 minutes and is poured over the cake instead of spread (so easy!!). Plus, after it sits for a while, it turns into this cracked, fuzzy texture that’s just to die for.
This chocolate zucchini cake is a bit healthier than most cakes that add zucchini. Zucchini adds a lot of moisture to the cake without adding fat. It also contains vitamins and antioxidants.
I also swapped out the applesauce for butter, so this pie is low in fat without sacrificing flavor or texture.
The Best Zucchini Cake!
Because this zucchini pie is so moist, I think it’s best to refrigerate it. Super moist cupcakes spoil faster at room temperature.
Increase the amount of butter in the recipe to 1 1/2 cups and omit the applesauce entirely.
This chocolate zucchini cake is moist and fluffy because of the zucchini. My kids don’t understand that I added vegetables to their dessert with this recipe.
You can use any chocolate icing you like, but we love my mom’s chocolate icing. It poured over the cake like a dream and set beautifully smooth, but when the cake was sliced, the frosting took on that really crispy top and tasted a bit like fudge.
