But when it comes to my dessert, I let them surprise me. I wouldn’t turn my nose up at sugar! They indulged in an assortment of Little Debbie desserts, Chuy Chips Ahoy, Oreos, Keebler Elves and sometimes homemade cookies. (The cooking gene mostly left my mom!)

Most of my friends’ parents packed similar treats, so we usually traded at the end of the meal based on what happened that day. Sometimes we talked about full desserts (one small Debbie’s Oatmeal Pie for one Keebler elv!), but more often than not we split desserts instead.

Homemade cookies were automatically the most popular child on the table. From sitting in the sun on picnic tables with soft, dense, chewy and partially melted chocolate chips… They were rarely split or shared, especially when they appeared in my lunchbox – which was a rare occurrence!

My mom used to follow the recipe on the back of the chocolate chip bag, but as I grew into a healthy cooking blogger, I just couldn’t do it anymore! The most important part of this recipe is the gluten-free flour mixture. Many gluten-free flours can be coarse or grainy and often add that texture to finished baked goods. But I didn’t want grainy cookies – I wanted ones that were soft and chewy in texture, like regular cookies!

So I tried the gluten-free mixture ten times. I started with millet, brown rice and tapioca flour, but both of them have a weak texture. You can’t tell with muffins and cakes, but it’s very telling with cookies! After substituting individual flours and cutting back on others, I found my perfect trio: millet, tapioca, and coconut flour.

Coconut flour has become the missing piece of the gluten free flour puzzle! It’s not as grainy as the others and it gave the cookies the smooth texture they needed. However, it is 3 times more absorbent than ordinary flour

It is important to measure it correctly. (I recommend a kitchen scale for this!) Plus, coconut flour will make your cookies dry and chewy.

Gluten gives baked goods texture and makes cookies chewy, so flour requires another ingredient that mimics those properties: xanthan gum. You can find xanthan gum in the baking aisle next to gluten-free flour. It’s a bit more expensive than the other ingredients, but this bag lasts a long time. (I bought this a year and a half ago and barely used the bag!)

Unlike traditional recipes, you need to refrigerate and let this cookie dough rest. That being said, coconut flour is more absorbent than regular flour, so you need to give it time to absorb the moisture. Refrigeration also hardens the cookie dough so it doesn’t spread when baked.

For the thickest cookies, divide the cookie dough into round mounds that are the same length as they are wide. . For thinner and wider cookies, gently flatten the dough with a spatula before baking.

IMPORTANT BABY REMINDER – READ BEGINNING: Measuring wholemeal flour correctly is very important, especially coconut flour. Coconut flour is 3x more absorbent than regular flour, so adding more will dry out the cookies and make them cakey. I recommend using a kitchen scale if you have one. For best results, I do not recommend substituting gluten-free flour for any flour used in this recipe. I do not recommend substituting or omitting xanthan gum. (See the text of my blog post above for more info!)

SUGAR NOTE: If using light brown sugar, it should be lightly packed into the measuring cup and weigh 212g instead of 192g.

COOKIE TIP: For thinner and wider cookies, flatten the cookie dough slightly with a spatula after placing it on the baking sheets. Make sure the dough is wide enough for thicker cookies.
