It’s hard to go wrong with the cake and it gets a lot of moisture from the zucchini, plus it’s topped with my mom’s famous fondant cake.

This chocolate pumpkin pie is a little healthier than most pies because of the addition of zucchini. Zucchini adds a lot of moisture to the cake without adding fat. It also hides vitamins and antioxidants.
I also swapped out the applesauce for some oil to keep this pie low-fat without sacrificing flavor and texture.
