I perfected this banana bread recipe for my cookbook and wanted to share it with you here. This recipe has all the hallmarks of classic banana bread – it’s airy, moist, with a sweet banana flavor, and is loved by toddlers and adults alike.

As you can see, my homemade banana bread has many redeeming qualities, the main one being that it doesn’t spike your blood sugar. However, you can save them all. No one can say that banana bread is healthy!

This recipe is flexible! One of the following flours works well. I like to use whole wheat flour and whole wheat flour – they provide all the nutrients of whole grains without the typical nutty taste.

*To substitute oats, you should use 2 1/2 cups for the reasons described in my guide to oats.

You can easily make this banana bread vegan or gluten-free – see the recipe notes for details. The recipe makes one loaf (about 10 slices).

Storage recommendations: This bread is moist, so it will only keep two to three days at room temperature. Store it in the refrigerator for five to seven days or in the freezer for up to three months. I like to slice the bread before freezing and thaw the individual slices by letting them sit at room temperature or by lightly toasting them.

*Oil options: I like coconut oil here. I used unrefined coconut oil and I can barely detect it in the finished product. If you’re into it, olive oil can give muffins a kick (I tried California Olive Ranch’s ‘Everyday’ variety and couldn’t even taste it). Vegetable oil has a neutral taste, but the average vegetable/canola oil is highly processed, so I recommend using cold-pressed sunflower or grapeseed oil when possible.

**Flour alternatives: instead of wholemeal flour, you can use equal amounts of all-purpose flour, wholemeal flour, spelled flour or a gluten-free all-purpose flour mix. Or substitute 2 ½ cups of oats.

Make it vegan: use maple syrup instead of honey, replace eggs with flax eggs and choose dairy-free milk (I used almond milk) or water.

Reduce the fat: I would argue that this bread contains a healthy amount of fat, but you can replace the oil with applesauce if you’re on a low-fat diet.

Mix the flour, baking soda, cinnamon and sea salt in a medium bowl and set aside for later use.

In a large bowl, mix the bananas, eggs, vanilla, honey, applesauce, Greek yogurt and melted butter. Stir until the mixture is smooth throughout.

Then add the dry ingredients mixture and mix until combined, then add toppings if desired. This bread is delicious enough to keep without toppings, but my kids never laugh at the idea of ​​adding chocolate to anything! 🙂

Vegan Banana Bread (easy + Healthy)

Pour the healthy banana bread batter into the prepared pan and bake in the preheated oven for 45-55 minutes, or until the top of the loaf is set and a toothpick inserted into the center of the loaf comes out with a moist crumb.

Let the whole banana bread cool in the pan for at least 30 minutes, then transfer to a wire rack to cool completely, serve slightly warm or at room temperature.

When the bread has cooled enough, cut into slices and enjoy! I recommend serving it with cinnamon honey butter, homemade peanut butter, or homemade vanilla almond butter.

Store this healthy banana bread recipe in an airtight container or plastic bag to prevent it from drying out. If you plan to eat the whole loaf in a day or two, you are welcome to keep it at room temperature. If it takes longer, I recommend keeping it in the fridge.

Be sure to use overripe brown bananas! They have the best flavor, maximum sweetness, and are the easiest to mash! They should be very dark brown or almost black and soft to the touch!
