This recipe is versatile! Any of the following flours will do. I like to use white wheat flour and whole wheat flour for pastry—they provide all the nutrition of whole grains without the usual nutty taste.

Flourless Banana Bread (no Flour, Butter Or Oil)

Storage Tip: This bread is moist, so it will keep for two or three days at room temperature. Store in the refrigerator for five to seven days, or about three months in the refrigerator. I like to cut the bread before it freezes and thaw individual slices, or let them sit at room temperature, or toast a little.

*Oil of choice: I love coconut oil here. I used unrefined coconut oil and it didn’t taste as good in the final product. Olive oil can give the muffins a vegetable flavor, if you like (I tested it with the “everyday” variety from California Olive Ranch and I can’t even taste it). Vegetable oil has a neutral flavor, but usually vegetable/canola oil is highly processed, so I recommend using cold-pressed sunflower or grapeseed oil when possible.

**Substitute for wheat flour: Instead of wheat flour, you can use equal parts of all-purpose flour, wheat pastry flour, spelled flour, or a gluten-free all-purpose mix. Alternatively, substitute 2 ½ cups oat flour.

Make it vegan: replace honey with maple syrup, eggs with flax eggs, choose non-dairy milk (I use almond milk) or water.

Ultra Moist Healthy Banana Bread (made With Olive Oil)

Low fat: I think this bread contains healthy fats, but if you are following a low fat diet, you can substitute applesauce instead of oil.

The main source of flour in this recipe is oats. Oatmeal is finely ground in a blender to turn it into oat flour, an excellent substitute for wheat flour.

This recipe also uses almond butter, which helps the quick bread rise and have a fluffier texture, because using only oats makes the quick bread thin. If you don’t have almond butter, you can use peanut butter instead.
