Classic Banana Bread Recipe
I’m excited to share with you this amazingly easy and healthy vegan banana bread that I’ve loved for years and look forward to loving more!
It’s all about bananas! Banana bread is easy to make vegan by adding an extra banana that acts as a binder, eliminating the need for eggs or other egg substitutes. And as an added benefit, it also helps reduce the amount of sugar you need. The trick is to use very ripe, freckled bananas, because the riper your bananas are, the less sugar you’ll need! This recipe only calls for 1/3 cup of sugar, but of course you can adjust up or down depending on your taste.
Fat or Fat Free: Instead of butter or vegetable oil, I call it ghee. But you will find a banana bread recipe that has the option to use vegan butter or reduce it if you prefer. I’ve also played around with half fat and half unsweetened almond milk (equals 1/3 cup) and had great results. And if you want to skip the fat altogether, try using sugar-free apples for super healthy vegan banana bread—it’s amazing!
Spice up your banana bread with toppings and toppings! Add up to 1 teaspoon of cinnamon, mix chocolate chips, walnuts or pecans into the dough. Or, once the batter is in the pan, sprinkle with nuts, pecans, sesame seeds, oatmeal, or sunflower seeds before baking to add texture and protein.

Level the spoon and flour! When measuring flour, it is useful to use the “spoon and level” method, which ensures that you do not add too much flour. Never measure flour with a measuring cup. Do not mix the dough too much! It is good baking practice when making any type of quick bread to avoid over-mixing, too much mixing of ingredients will create a pasty dough that may not rise well with gluten proteins. You just want to mix until you see streaks of flour.

Can I make this recipe fat free? I replaced the oil with applesauce and made fat-free banana bread and it was good and healthier too. The bread was a bit thicker but still tasted great.
Can I Make Banana Bread Without Baking Soda? Yes, I often make banana bread using 2 teaspoons of baking powder with great results, but I left the baking soda out of the recipe because I know some people may prefer to add it because it helps darken the top of the bread. . Note that if you don’t have any on hand, it’s fine to just use yeast.
Can I freeze banana bread? Of course, you can store banana bread safely in the refrigerator, it will stay fresh for up to 2 months when stored in a freezer safe container or bag. Just let it thaw in the refrigerator before eating. Banana bread can also be stored on the counter for up to 3-4 days. Or store in the refrigerator for up to a week.

Can I make muffins instead? Yes, and they are very good! You can use this chocolate chip banana cake recipe as a guide. If you don’t like chocolate chips, leave them out or replace them with nuts.

Easy Healthy Banana Bread Recipe
The tried and true classic vegan banana bread! Perfectly moist and delicious, this healthy vegan banana bread recipe is a great snack or a great way to start the day.
Bowl Method: Mash 3-4 bananas in a medium bowl (about 1 1/2 to 1 3/4 cups works well), add oil/apple and vanilla extract, mix again. Add flour, sugar, soda, baking powder and salt and mix well, but do not overdo it, just enough until the flour is combined. The batter will be a bit thick and a few pieces will be fine. If the mixture seems too thick, add more milk, especially if you’re using heavier flours like wholemeal or bran flour (you’ll need more).
Pour the mixture into a greased bowl. Bake for about 50 minutes – 1 hour. Ovens vary, mine usually takes 50 minutes. You can also check the middle of the bread with a toothpick, if it comes out clean, it should be ready. Remove from the oven and let cool for 10 minutes before slicing.
Original Method: Combine flour, sugar, baking powder, baking soda and salt in a medium/large bowl, set aside. Mash the bananas in a medium bowl. Add the oil, vanilla, and banana to the dry ingredients and mix until smooth without overworking. If the mixture seems too thick, add more almond milk (you’ll need more, especially if you’re using a heavier flour such as wholemeal or bran flour).

Storage: Store covered on the counter for up to 3 days or in the refrigerator for up to 1 week. Store in the refrigerator for up to 2 months. Thaw the wrapped loaves overnight in the refrigerator. Reheat in microwave or toaster oven with door.

No baking soda, don’t worry. I stopped using baking soda in this recipe, continued to use two teaspoons of baking powder and had great results, but I left the baking soda in the recipe because I know some people may prefer to add it because it helps to darken the top of the bread. If using coconut oil, make sure it is hot and liquid. My favorite oils for this recipe are flavored olive oil or coconut oil.
Enhance the taste. For a different flavor, add 1 teaspoon of cinnamon to the dry ingredients.
Using Dates: To use chopped dates using the 1-bowl method, just add them with all the ingredients. If using the original method, add them to the wet ingredients. I used 1/3 – 3/4 cup dates (depending on how sweet you like them), pitted and finely chopped.
