I am always asked what kind of “diet” I follow. This is difficult for me to answer because I have no food. I track my macros in the app, but nothing specific.

After years of calories and macro calculations, I manage to balance everything in myself.

As for what I eat, lots of vegetables, lean protein with carbs here and there. I call it being “carb responsible.” Something I am learning is very important now that I am 40 years old.

I am on an autoimmune disease free diet and I would say my diet is more Paleo-esque. However, I can’t give up cereal. I love a good bowl of oatmeal or a granola bar. It can be hard to find the purest granola bars with recognizable ingredients, and now that I’m on a gluten-free diet, I’m having a hard time finding one that I love.

Healthy Chocolate Granola Bars (gluten Free)

I made these Chocolate Chip Granola Bars four times this month and frankly, they didn’t last long. They are quick to make, with simple and familiar ingredients – honey, coconut oil, brown rice, oats, vanilla extract. You can’t go wrong with that!

Since I made them four times, I tried different variations, but this is my favorite. Another variation I made was with peanut butter. I cut in half the coconut oil with the creamy peanut butter (I like the Target Organic brand).

They’re so delicious, but I already have the peanut butter granola in there otherwise I’m going to post that too. With these Honey Oats Chocolate Chip Granola Bars you can make the most delicious lunch box snack. Perfect for back to school!

Granola bars often get a bad rap because they can contain questionable ingredients and are often full of sugar. It really is an eye opener when you go down the granola bar aisle in the supermarket and pick up the boxes to read the ingredients list. Many granola bars labeled “healthy” and marketed to children are unhealthy and look like regular chocolate or candy! This is definitely one of the reasons why I think making homemade granola bars or protein bars is the way to go.

These delicious granola bars with chocolate chips encourage digestion as they contain high amounts of dietary fiber and energy as well as being a good source of complex carbohydrates. Every little bar really makes you feel full and satisfied. The granola bar base contains gluten-free whole grains, whole flaxseed, gluten-free flour and your favorite granola (this makes each type of bar special just for you!). For the healthy granola bars, I used my favorite honey-almond granola, but you can use any commercial grade granola.

You can also use homemade granola, just make sure it’s not too hard because this can affect the consistency of the bars and they can be crumbly)

To bring a sense of “chewy” to these delicious homemade granola bars, I used natural unsweetened applesauce, olive oil, pure maple syrup, coconut palm sugar, and whole eggs. These ingredients both add moisture and create a delicious consistency while keeping the bars free of refined sugar. Regular commercial granola bars contain corn syrup and glycerin, which gives them a little flavor, but these ingredients are refined and processed…not the best choice!

Almonds come in two forms: almond butter helps hold the bars together, and some toasted, sliced ‚Äč‚Äčalmonds add crunch to the granola bars.

Be sure to toast the slivered almonds – it takes a bit of time, but the flavor difference is worth it.

Maple syrup is the only sweetener and only 1/4 cup is needed for all sweetness. These sugar-free granola bars don’t need much more than that‚ÄĒchocolate chips and drizzle provide all the sweetness you want. Since I like sweet and salty, I topped the dried cherry, almond + chocolate chip granola bars with a pinch of vanilla bean sea salt. Calm my mind.
