Preheat oven to 350 degrees. Remove easily by spraying 9 x 5 pans with spray or blotting with parchment paper.

In a large bowl, combine the flour, baking powder, baking soda, and salt. Mix and separate.

Cream butter, sugar, eggs and vanilla in a medium bowl. Then add the dry ingredients along with the dried bananas. Mix well and then fold in the chocolate chips.

Pour the batter into the prepared loaf pan, top with the chocolate, and bake for 45-55 minutes or until a knife inserted into the center comes out clean. Remove from oven and cut into 10-12 pieces.

I’ve mixed unprocessed sugar-free dark chocolate from Hoo’s Kitchen for the sweet chocolate goodness in this recipe. I usually mix it into the batter and sprinkle a few drops on top. This is the best way, so you get chocolate inside and outside of the banana bread (chocolate in every bite!).

Whenever I bake large loaves like this, I freeze half immediately so the rest is needed for breakfast and can be reserved in case we don’t have it ready or in case of an emergency. Now that we have a bit of bubbly in our lives, the fridge is my best friend when I’m craving something sweet. I always thank myself for saving something for later!

The recipe is quick + simple too, because who wants to spend hours making banana bread? Nobody, that’s who. It takes enough time to cook and you don’t need to add any extra steps to make it last longer.

The recipe uses a bit of nut butter to help keep things super soft – I used peanut butter, but any nut or seed butter will work. You can’t really taste it, so it doesn’t matter! It’s also sweetened with 1/3 cup coconut sugar – if your bananas are SUPER ripe and sweet, you can reduce this amount to your liking.
