After posting my grain-free recipes for paleo banana bread using paleo banana bread with almond flour and coconut flour, I followed both with countless variations on grain-free banana bread.

That being said, this is the first gluten-free banana bread recipe I’ve posted on this site using a gluten-free flour mix.

I used my favorite gluten-free all-purpose flour mix and sweetened the bread mainly with ripe bananas and a touch of coconut sugar.
Over the years, I’ve learned a few tricks to making moist, fluffy, melt-in-your-mouth delicious banana bread. Let’s discuss!
Not to mention, naturally sweet. Instead of adding lots of oil or butter, most of the moisture can come from the banana itself without sacrificing flavor, moisture or tenderness.
For this reason, I usually use one and a half cups of mashed ripe bananas in one slice of banana bread, which is usually the equivalent of 4 ripe bananas.
The Best Vegan And Gluten Free Banana Bread
For my grain-free banana bread recipe, I didn’t add any extra fat (oil or butter) because there are plenty of sources from almond flour and coconut flour.
Since a gluten-free flour mix doesn’t have as much fat as almond flour or coconut flour, I used a little melted butter to give the bread some fat love. Coconut oil and avocado oil work too!
The generous amount of bananas allows you to cut down on added sugar, which I see as a bonus.
For this grain-free banana bread recipe, I add a few tablespoons of pure maple syrup or coconut sugar to boost the sweetness to absolute perfection. You can also use cane sugar or stick with mashed bananas for sweetness.
Gluten Free Vegan Chocolate Chip Banana Bread Recipe (maple Sweetened!)
If you’re wondering what makes this recipe the best banana bread recipe, here are the key points:
Preheat oven to 350 degrees F and line a 9” x 5” baking pan with parchment paper.
Start by mashing the bananas in a mixing bowl until they reach the desired consistency. I like to leave mine a little thicker so that when the bread bakes, I get little pockets of rich banana flavor.
Whisk the eggs, vanilla extract and cooled melted butter in a large bowl until combined (wet ingredients).
Gluten Free Banana Bread With Chocolate Chips · Seasonal Cravings
In a separate bowl, whisk together the gluten-free flour, baking soda, sea salt, coconut sugar (or brown sugar) and cinnamon (dry ingredients).
Pour the dry mixture into the mixing bowl with the wet mixture and stir until the mixture is combined.
Bake on the middle rack of the preheated oven for 40 to 50 minutes, or until the top is golden brown and the bread has risen noticeably. Turn off the oven and let sit in the warm oven for another 5 to 10 minutes.
Remove the bread from the oven and let it cool for at least 30 minutes before slicing and serving.
Easy Gluten Free Banana Bread
The end result is super moist and fluffy gluten-free banana bread with a great texture and a great recipe to repeat when you need a sweet treat.

I always use Red Bob’s Gluten-Free 1-to-1 Baking Flour, but I’ve heard that King Arthur Gluten-Free Measure Flour Mix is also great.

Moist Banana Chocolate Chip Muffins (vegan, Gluten Free, Dairy Free, Refined Sugar Free, One Bowl)
I made this last night and it was so good!! This is my first time making GF banana bread and I am so happy with the result!! I used maple syrup instead of coconut sugar and I did 1/4 cup instead of 1/2. But the only change I made! If you like sweet bread I suggest using 1/2 cup because it’s not too sweet with only 1/4 cup. But I’m not a fan of super sweet so it works great! This is very good! Definitely putting this in my recipe book!

The best bananas for banana bread should be very ripe, and I mean very ripe. The darker the better, really (within reason – I’ll explain in more detail below).
If your bananas are yellow, with some green around the stem, they may be ripe enough for banana bread. Using such bananas will give you banana bread that lacks flavor (and can be quite dry).
Bananas that have a rich yellow color with lots of brown spots and stripes are your best choice for banana bread. These bananas are sweet at their peak and have a lot of flavor.

On the other hand, overripe bananas that are completely black (and often feel unpleasant to the touch) are unfortunately past their prime – using them can produce banana bread with an unpleasant taste. Better to just throw it away.
