The thing is, I’m not a morning person. Not at all. Long ago, in college, I didn’t even think about 8am classes! Because it was too early! And even if I had no choice, I would sit in that class, cut that, sleep in that class, and walk around passed out until 11 am.
But now that I’m a certified, card-carrying adult, I get up early every day at 5:58. EARLY.
5:58 That extra 2 minutes until 5am for some reason. m. they make me feel like I’m waking up at 5am. m. not at 6 am. m. That counts as extra time in the day, right?

Anyway, college hit me over the head and said, “Um, didn’t you sleep last night?” Needless to say. “Sure, you’re getting ready for bed right now!!!” And then, “Why don’t you go to parties anymore or do something moderately fun? Boring adult!!”
Anyway, the ONE thing that makes it all better? Homemade donuts for breakfast. As I said, there is at least one distinct advantage to this old job called food blogging, and it’s called:
, university me?!? That instant ramen and 2-day-old pizza you’ve always missed doesn’t look so good and classy now, does it?
Now I have to get up early (who am I kidding) to make homemade chunky chunky paleo granola and moist banana chocolate chip muffins. They are much better than getting up at 10am. m., still very foggy when I get to class, and then sit up until 3 A.M. m. for last-minute crash sessions and parties (just in case).

So much better than store-bought heavy, overly sweet muffins. They are better than anything you can buy on your way to work.
They’re moist (in case you haven’t noticed), the perfect balance between deliciously fluffy and satisfyingly creamy, and full of melted chocolate chips, they taste just right. They are going to take off all their socks in the morning!

Chocolate Chip Banana Muffins
You can make these muffins dairy-free with a few simple changes. Use almond milk instead of regular milk, or cream or dairy-free yogurt instead of butter.
You can add 100% of your favorite toppings to these gluten-free banana muffins! I love these mini chocolate chips for Gluten Free Banana Chocolate Muffins. Walnuts or pecans are also delicious additions.
But if you prefer not to mix them, these muffins are really delicious on their own. My kids love it hot and buttery!
Storage: Cool the remaining muffins completely on a wire rack. Then store at room temperature in an airtight container or tightly wrapped in plastic wrap. They will keep up to 2 days.
Almond Flour Banana Muffins With Chocolate Chips (gluten Free, Paleo)
To freeze: You can freeze the muffins in a ziplock bag. Thaw banana bread to room temperature before serving.
The gluten-free muffins will rise better if you increase the oven temperature during the first 10 minutes of baking. It’s such a fast grower that it will make a perfect domed bag in no time!
Many gluten-free bags are dry because they use low-quality gluten flour. Choose a high-quality gluten-free flour for a softer crumb. My favorite way to make these muffins is with my own gluten-free flour mix (I add a little almond flour), which gives it a better texture.
I love butter, but the best way to bake soft, fluffy gluten-free muffins is with vegetable or avocado oil.
