The thing is, I’m not a morning person. Not at all. Long ago, in college, I didn’t even think about 8am classes! Because it was too early! And even if I had no choice, I would sit in that class, cut that, sleep in that class, and walk around passed out until 11 am.

But now that I’m a certified, card-carrying adult, I get up early every day at 5:58. EARLY.

5:58 That extra 2 minutes until 5am for some reason. m. they make me feel like I’m waking up at 5am. m. not at 6 am. m. That counts as extra time in the day, right?

Anyway, college hit me over the head and said, “Um, didn’t you sleep last night?” Needless to say. “Sure, you’re getting ready for bed right now!!!” And then, “Why don’t you go to parties anymore or do something moderately fun? Boring adult!!”

Anyway, the ONE thing that makes it all better? Homemade donuts for breakfast. As I said, there is at least one distinct advantage to this old job called food blogging, and it’s called:

Now I have to get up early (who am I kidding) to make homemade chunky chunky paleo granola and moist banana chocolate chip muffins. They are much better than getting up at 10am. m., still very foggy when I get to class, and then sit up until 3 A.M. m. for last-minute crash sessions and parties (just in case).

You can make these muffins dairy-free with a few simple changes. Use almond milk instead of regular milk, or cream or dairy-free yogurt instead of butter.

You can add 100% of your favorite toppings to these gluten-free banana muffins! I love these mini chocolate chips for Gluten Free Banana Chocolate Muffins. Walnuts or pecans are also delicious additions.

But if you prefer not to mix them, these muffins are really delicious on their own. My kids love it hot and buttery!
